RAINBOW SPRINKLE COOKIES
Rainbow Sprinkle Cookies are fun for everyone! Imagine a funfetti and vanilla flavored cookie loaded with rainbow sprinkles. The cookies are buttery, soft, slightly crumbly and has bits of sprinkles throughout each bite so they have a slight crunch! These cookies require no-chilling and take 10 minutes to make and 10 minutes to bake– that’s it!
This is the perfect treat anytime you’re craving a cookie. If you love sprinkles, you’ll especially love this treat. The white chocolate drizzle on top makes these cookies even sweeter. Instead of coating the cookie dough balls with sprinkles, the sprinkles are mixed into the cookie dough!

WHAT YOU WILL NEED TO MAKE THESE RAINBOW SPRINKLE COOKIES
- Unsalted butter
- Sugar
- Brown sugar
- Whole egg
- Egg yolk
- Vanilla extract
- Flour
- Vanilla pudding mix
- Baking powder
- Sprinkles
- White chocolate
HOW TO MAKE SPRINKLE COOKIES
- Preheat oven to 350 degrees F. Line a baking sheet and set aside.
- In a bowl with a hand mixer or Kitchen Aid mixer beat the butter, sugars, eggs and vanilla together until combined. Scrape the sides of the bowl when necessary.
- Next, add in the baking powder, salt, pudding mix, flour and 1/3 cup sprinkles. Mix until combined.
- Scoop cookies with a mini ice cream scoop and place on cookie sheet 2 inches apart. Gently press each cookie down with your hand to flatten. Bake for 8-10 minutes. Don’t over bake, these are best super soft!
- Let cookies cool for 10 minutes, in the meantime melt white chocolate. When cookies are cooled, drizzle white chocolate on top then sprinkle more sprinkles. Enjoy!

Rainbow Sprinkle Cookies

Notes
- Store leftover cookies in an airtight container in a cool, dry area. Cookies will stay fresh for up to a week.
