This recipe is ideal if you don’t have a ton of time in the kitchen because these only take 20 minutes to make from start to finish. There are only 6 simple ingredients in these tasty cookies and you can use any brand of cake mix. I used Pillsbury Funfetti Cake Mix.
In a nutshell, these Funfetti Cake Mix Cookies taste like a cake, cookie, and cupcake combined into one bite!
This is exactly what the cookie dough will look like.
Every time I bake these cookies I always get so many compliments! I tell people these are the easiest and quickest cookies to make, because they are. How much easier can it get when it’s made from cake mix?!
The best part is you can customize these to any cake flavor you want. For example, I made these Valentine’s Day themed cake mix cookies with strawberry cake mix. This recipe is versatile and can be customized for just about any holiday or occasion. See below for other options!
VARIATIONS
Chocolate Cake Mix Cookies: use chocolate cake mix- add in chocolate chips to make them even more chocolatey.
Brownie Mix Cookies: use brownies mix.
Frosted Funfetti Cookies: add icing or frosting once the cookies have cooled. Add more sprinkles on top or colored sugar.
Chocolate dipped cake mix cookies: dip half of each cookie in melted white, milk or dark chocolate. You could also do a combination of chocolates!
Lemon Cake Mix Cookies: try my Lemon Cake Mix Crinkle Cookies! They are made with 5 ingredients and if you love lemons desserts, you will love this recipe.
Chocolate Chip Cake Mix Cookies: use white or yellow cake mix and add 1 1/2 cups of chocolate chips.

FUNFETTI CAKE MIX INGREDIENTS
- Vanilla or Funfetti cake mix: you can use either one. The only difference between Funfetti and Vanilla is the Funfetti has sprinkles in the cake mix.
- Baking powder: just a little will make these cookies rise and get extra fluffy.
- Eggs: for moisture and texture.
- Vegetable oil: binds the ingredients and gives the cookies a soft cake-like consistency.
- Vanilla extract: enhances the flavors of the cake mix, plus adds more.
- Sprinkles: the best part! You can use any type of sprinkles. Use different colors for different themed holidays or occasions. 🙂
HOW TO MAKE COOKIES OUT OF CAKE MIX

MIX WET AND DRY INGREDIENTS. Preheat oven to 350 degrees F. In a large mixing bowl, mix together the cake mix and baking powder. In a small bowl, mix the eggs, oil, and vanilla extract.

COMBINE AND FOLD IN SPRINKLES. Add the egg mixture to the cake mixture and stir until there are no cake mix white pockets. Make sure the batter is smooth and fluffy- but don’t over-mix. Fold in the sprinkles until combined (save some sprinkles for the topping).

SCOOP AND BAKE. With a mini ice-cream scooper, scoop the cookie dough onto a lightly greased cookie sheet 1 inch apart. Top each cookie with more sprinkles and bake for 9-12 minutes (they may look under-cooked). Place on cooling rack and let cool for 10 minutes.
STORING LEFTOVER COOKIES
Before storing, make sure the cookies are completely cool before storing. Store them at room temperature in an airtight container or large ziplock bag. They will stay fresh for 7 days. They will still be ok to eat after 7 days but they may start to get crumbly and stale.

- 1 tsp. baking powder
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 tsp. vanilla extract
- 1 cup sprinkles

Notes
- You can add as many sprinkles as you want to this recipe. I find that one cup is the perfect cookie to sprinkle ratio.

Love this recipe. My kids made this on their own. We subbed oil for butter. We had a holiday Funfetti mix that worked well. Their batch needed 12 minutes to bake. Soft and great for my baby bakers. Thanks!
