Pumpkin French Toast

Fall is perfect for indulging in pumpkin everything! Pumpkin spice and everything nice is what this Pumpkin French Toast recipe is made of. Thick pieces of white bread get dunked in a custard-like egg mixture made with pumpkin puree, warm pumpkin spices, milk and vanilla extract.

French Toast is always a favorite in our house and adding pumpkin to it makes it even better! Pumpkin has tons of nutrients in it too so even more of a reason to try this recipe out. 

Other french toast recipes I love are Cinnamon Swirl French Toast, Gingerbread French Toast, and Triple Berry French Toast. 

Pumpkin French Toast

I love to top my Pumpkin French Toast with a dab of melted butter, maple syrup, powdered sugar, whipped cream and cinnamon! The Pumpkin French Toast is lightly sweetened with brown sugar which takes this breakfast treat to the next level!

If you couldn’t already tell I’ve been on a pumpkin kick with these Pumpkin Spice Pancakes, Pumpkin Snickerdoodles, Pumpkin Cream Cheese Swirl Muffins and Pumpkin Pie Bars. I love it all and soaking up all the Fall treats and flavors as much as I can before another season flies by.

You can make any of these recipes with your leftover pumpkin puree from this Pumpkin French Toast, just be sure to buy the larger can of pumpkin.

TIPS FOR MAKING THE BEST PUMPKIN FRENCH TOAST

  • French toast is always better when served immediately but if you have leftovers, store in the refrigerator for up to 3 days. Make sure to store in a covered baking dish or airtight container.
  • If you prefer to use whole wheat sliced bread for a healthy alternative you can use that instead of white. Thick bread is always best!
  • Make sure to use 100% pumpkin puree, not pumpkin pie filling- pumpkin pie filling will not work as it is loaded with other ingredients.
  • Almond milk can be used instead of regular milk if you prefer. Make sure it is unsweetened.
  • Be generous when buttering your frying pan! The butter gives the outer crust of the French toast a deliciously buttery flavor.
  • This recipe can be easily doubled if you wanted to make more or serve this for a large gathering or holiday brunch!

Fortunately pumpkin has quite a few perks as well such as its potassium and vitamin K content. It is also heart healthy, an immune booster and is full of fiber–so there is a reason to indulge! Another perk of this breakfast is it will make your kitchen smell delicious and full of Fall scents.

INGREDIENTS TO MAKE PUMPKIN FRENCH TOAST

  • Sliced white bread
  • Eggs
  • Pumpkin puree
  • Ground cinnamon
  • Pumpkin Pie Spice
  • Milk
  • Vanilla extract
  • Brown sugar
  • Butter
  • Syrup
  • Whipped cream

HOW TO MAKE PUMPKIN FRENCH TOAST

Pumpkin French Toast steps

  1. In a 9 x 13 inch baking pan or dish, whisk together eggs, pumpkin puree, ground cinnamon, pumpkin pie spice, milk, vanilla extract and brown sugar until combined.
  2. Heat a large frying pan or griddle to low-medium heat. Lightly grease with butter and dunk 4 slices of bread into the pumpkin batter. Poking each slice a few times with a fork and then flip. Make sure each side of the bread is covered completely in the batter.
  3. Gently shake off any excess batter on each bread slice and grill for 2-4 minutes on each side until golden brown. Flip and continue to fry until both pieces are golden brown and the bread seems to be fluffy. Transfer the cooked french toast to a large platter or dish and repeat with the remainder 4 slices of bread. Make sure to keep buttering the frying pan (this will make it get golden brown). Serve immediately. Some optional toppings are butter, maple syrup, powdered sugar, whipped cream, and/or cinnamon.

Ingredients

  • 8 slices thick sliced white bread
  • 4 whole eggs
  • 1/2 cup pumpkin puree
  • 1 1/2 tsp. ground cinnamon
  • 1 1/2 tsp. pumpkin pie spice
  • 3/4 cup milk (whole milk is best but you could use lowfat)
  • 2 tsp vanilla extract
  • 2 Tbsp. brown sugar
  • 1/4 cup butter; divided for melting on griddle

  • butter
  • maple syrup
  • powdered sugar
  • whipped cream
