This super easy Bacon Spinach Salad is filled with bacon, blue cheese crumbles, onions, tomatoes, hard boiled eggs and topped with a warm bacon dressing!

You can never go wrong with bacon, especially when it’s in a salad! This salad has a vast amount of texture and flavor from the crunchy bits of bacon to the creamy crumbles of blue cheese. Made with a few quick steps and is hearty enough to be served as a meal! Sometimes we add a bit more bacon to make it extra wholesome for lunch or dinner 😉
This warm bacon dressing is packed with bacon flavor and crumbled bacon bites! This spinach salad isn’t like your typical salad..it’s comforting and loaded with so much goodness. Every ingredient in this salad brings immense flavor. The warm bacon dressing gently wilts the spinach making it easy to eat every piece of this salad!
One of my favorite ways to enjoy bacon is in this salad dressing. You get chunks of bacon in both the salad and dressing.. the smokiness from the bacon takes this salad to a whole new level of deliciousness. ADDITIONAL TOPPINGS TO ADD TO THIS BACON SPINACH SALAD
Some other great additional toppings you can add to this salad are: Mushrooms, croutons, dried cranberries, diced apples, pomegranate arils, sliced avocados, walnuts, turkey meat, chicken, or steak! This salad is so filling and satisfying you will start to crave this like I do!

INGREDIENTS TO MAKE BACON SPINACH SALAD
- Fresh spinach: you can use any type of lettuce. Spinach works best as it will wilt a bit when the dressing get poured on top as opposed to lettuce
- Roma tomatoes: cherry tomatoes can be used as well
- Blue cheese crumbles: gorgonzola or feta cheese are great toppings in additional or if you want to replace the blue cheese
- Red onions: gives this salad an extra bite and pepper flavor
- Hard boiled eggs: add an extra creamy texture
- Bacon: any type of bacon will work but thick-cut is best. Using thick-cut bacon will make this salad extra meaty and hearty
INGREDIENTS TO MAKE WARM BACON DRESSING
- Olive oil
- Bacon fat
- Garlic
- Balsamic vinegar
- Dijon mustard
- Bacon
- Salt + pepper
HOW TO MAKE BACON SPINACH SALAD
- Heat a large skillet or frying pan over low-medium heat and cook bacon chunks until cooked and crispy, about 5 minutes. Remove the bacon froom the pan and place on a plate lined with a paper towel.
- Pour the warm bacon fat in a medium bowl and whisk in all of the other ingredients including 1/4 cup of bacon chunks. Whisk until all ingredients are well combined.
- To assemble salad, place the spinach leaves in a large salad bowl and sprinkle tomatoes, onions, hard boiled egg pieces, blue cheese crumbles, and bacon chunks on top. Drizzle the warm dressing on top of the salad and serve immediately.

Ingredients
- 8-9 ounces fresh spinach
- 2 whole roma tomatoes; diced
- 1/2 small red onion
- 2 hard boiled eggs; chopped
- 4 ounces blue cheese crumbles
- 9 slices thick cut bacon; divided for the dressing; crumbled
Warm Bacon Dressing
- 1 Tbsp. oil
- 3 Tbsp. bacon fat
- 1/4 tsp. garlic; minced
- 3 Tbsp. balsamic vinegar
- 1 tsp. dijon mustard
- 1/8 tsp. salt
- 1/8 tsp. black pepper

To make the dressing
