Servings: 12 egg bites

Equipment

Ingredients

  • 8 whole eggs
  • 1/4 cup milk
  • 1 1/2 cup cheese; divided

    1. Hi Jan,

You can use any cheese you desire. For the recipe I prefer cheddar cheese. I use 1 cup for the egg mixture and the other 1/2 cup to top the muffin cups. I hope this helps, I’ve also adjusted the recipe. Thanks so much!

    1. Hi Brittany! Great question, yes you definitely can! To freeze the egg bites, be sure to cool them completely and then wrap each bite individually in plastic wrap and transfer to a large ziplock bag. They will last up to 2 months in the freezer. To serve from the freezer, thaw them out overnight by placing them overnight in the refrigerator and reheat in the microwave (or oven). You can also defrost them directly from the freezer by placing frozen egg bites in the microwave and heating until thawed and completely warm. *Be sure to remove plastic wrap before microwaving! 🙂

  1. Instead of muffin cups, I put mix in 9 x 13 pan and added spinach. Cooked about 25 min. Really good. Easier to serve.
