Hawaiian Roll French Toast casserole
French Toast with Hawaiian Rolls is a fun twist on french toast and will be a new family favorite. The slightly sweet, fluffy, and buttery-like rolls soaks up the vanilla cinnamon sugar custard mixture, gets topped with fresh berries, and bakes until golden brown. This recipe reminds me of a bread pudding, and you will want this for dessert!
We add lots of fresh berries to make the perfect topping and it pairs to well with the sweet rolls. This is so much easier (and better) than Classic French Toast because the bread pieces get a chance to soak in the custard and when it bakes all together it’s super soft and custardy. There’s nothing like it on a lazy weekend morning, I promise!

- Hawaiian sweet rolls: The star of the recipe! This bread is so fluffy, perfectly sweetened and makes this french toast so delicious.
- Whole eggs: Adds richness and binds the French Toast batter.
- Milk: Whole milk is preferred but you can use any.
- Sugar: We use a combination of both granulated sugar and brown sugar.
- Vanilla extract or vanilla bean paste: Adds a rich and warm flavor.
- Fresh berries: Strawberries, raspberries, and blueberries are our favorite but use your favorite. You can also use frozen berries, just be sure to thaw completely, and then remove excess moisture with a paper towel.
- Powdered sugar: For dusting the top!
- Maple syrup: Adds a warm and sweet flavor to the egg mixture.

Prepare baking pan and cut rolls: Grease a 9 x 13 casserole pan. Cut the Hawaiian rolls into cubes. It will be about 8 cups total. Place the bread cubes evenly in the greased pan.
Make french toast mixture and pour over bread cubes: Whisk eggs, milk, sugars, syrup, and vanilla until combined. Pour the mixture evenly over the bread, making sure to wet all pieces. You can cover and refrigerate for 2 hours or overnight. (Overnight is best so the flavors get a chance to soak into the bread)
Top with berries: Preheat oven to 350 degrees F. Remove the cover from the french toast and sprinkle the berries evenly on top. You can add as many or as little berries as you would like.
Bake, cool and enjoy: Bake the french toast for 30-40 minutes or until golden perfection. The french toast should be firmer in texture and not jiggly in the center with crispy edges. The Allow it to rest for 10 minutes after it comes out of the oven. Sprinkle the top with powdered sugar and a drizzle of maple syrup.

- Add streusel topping: Top with a crunchy streusel, just add it on top of the berries for an even sweeter flavor.
- Add-ins and toppings: Chocolate chips, raisins, caramel sauce, chocolate sauce, pumpkin puree, chopped nuts, and sprinkles to celebrate a birthday. You can add your favorite toppings!
- Same day bake: If you didn’t want to let the french toast sit in the refrigerator, you don’t have to. Although it allows for optimal flavor but you can also bake it right after it’s assembled.
- Tropical variation: Add shredded coconut, mango chunks, and pineapple instad of the berries. You’ll feel like you’re on vacation! 🙂
- Dessert: Serve this up for dessert and call it a French Toast Pudding instead! Serve with vanilla ice cream on top.
