Hawaiian Roll French Toast Bake

This Hawaiian Roll French Toast Bake is easy, delicious and made with the soft Hawaiian Rolls and fresh berries. Baked in a rich cinnamon sugar custard, has a fluffy texture and is so decadent it tastes like dessert! Perfect for a weekend breakfast dish or brunch and can be made days in advance!

Ingredients

  • 1 package Hawaiian Rolls
  • 5 whole eggs
  • 1 1/4 cups whole milk (you can also used reduced fat)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons maple syrup optional
  • 2 1/2 teaspoons vanilla extract
  • 3/4 cup blueberries fresh or frozen
  • 3/4 cup strawberries fresh or frozen, sliced or diced
  • 3/4 cup raspberries fresh or frozen
  • powdered sugar optional

Instructions

  • Grease a 9 x 13 casserole pan. Cut the Hawaiian rolls into cubes. It will be about 8 cups total. Place the bread cubes evenly in the greased pan.
  • Whisk together the eggs, milk, sugars, syrup, and vanilla until combined. Pour the mixture evenly over the bread, making sure to wet all pieces. You can cover and refrigerate for 2 hours or overnight. (Overnight is best so the flavors get a chance to soak into the bread)
  • Preheat oven to 350 degrees F. Remove the cover from the french toast and sprinkle the berries evenly on top. You can add as many or as little berries as you would like.
  • Bake the french toast for 30-40 minutes or until golden brown. The french toast should be firmer in texture and not jiggly in the center. Allow it to rest for 10 minutes after it comes out of the oven. Sprinkle the top with powdered sugar and a drizzle of maple syrup.
