These Sausage Pancake Muffins (or Pancake Sausage Bites) are the perfect way to start the day, especially when you’re on-the-go! The sweet and savory combination is so satisfying and these are loaded with protein so you’ll feel satisfied for longer. Small pieces of breakfast sausage is mixed in the pancake batter and topped on the muffins so you’ll be sure to get sausage pieces in every bite.
This easy breakfast recipe comes in handy because it’s made with only 4 ingredients and you can use your favorite pancake mix and sausage. No need to worry about the hassle and spending time over the stove flipping pancakes since we bake them in a muffin pan.

- Pancake mix: You’ll need 2 cups of pancake mix. Use your favorite brand, I love using Kodiak Cakes because it has the most protein. You can also make your own homemade pancake batter from scratch, try this pancake recipe!
- Breakfast sausage: I love using chicken or turkey maple sausage but use what you love! Pork sausage will also work perfectly as well. Make sure you use fully cooked sausage links.
- Water: Helps bind the dry ingredients together.
- Maple syrup: Adds sweetness, use more or less depending on sweet and how much maple flavor you want.
how to make sausage pancake muffins
Prep muffin pans: Preheat oven to 350 degrees F and line a muffin pan with silicone liners or coat well with nonstick cooking spray.
Mix ingredients together: In a large mixing bowl, combine pancake mix, water, maple syrup, and half of the sausage pieces. Mix just until combined- do not over-mix otherwise muffins won’t be fluffy.
Add to muffin pan: Pour pancake mix evenly into 12 muffin spaces and top with remaining sausage pieces.
Bake: Bake for 20 minutes or until the middles are completely cooked through and the tops are a light golden brown. You can also insert a toothpick into the center of each muffin to ensure they come out clean. Serve with warm maple syrup (optional) and enjoy!

- Add-ins: Chocolate chips, raisins, pumpkin puree, chopped nuts, or fruit such as blueberries or bananas.
- Make gluten-free pancakes: Swap the all-purpose flour for gluten-free flour.
- Add more sweet flavor: Add a tablespoon or two of brown sugar, honey, or pure maple syrup to add more sweetness. Adding a teaspoon of vanilla extract will add sweetness too!
- Mini Muffins: If you want bite-sized muffins, add them to mini muffin tin instead to make Mini Sausage Pancake Muffins. Be sure to reduce the baking time a few minutes since they won’t need as much time to bake.
- Sheet Pan Pancakes: Instead of baking these in a muffin pan, bake them in a baking sheet instead.
- Butter flavor: Add melted butter or butter extract to the pancake mix. You can also drizzle warm melted butter on top of baked muffins.

LEFTOVERS & STORAGE
To Store: Place leftovers in an airtight container, cover dish with plastic wrap, or large zip-lock bag in the refrigerator for up to 5 days. Heat in the microwave or oven before eating to make the muffins soft and warm again.
HOW TO freeze Sausage Pancake Muffins
Since these are always a huge it, it’s a good thing to have laying around in your freezer. Place muffins in an airtight container or large zip-lock bag and freeze for up to 3 months. To defrost your muffins, place them in the refrigerator to defrost overnight or on the counter for a few hours.
