Cheesy Roasted Potatoes

Say hello to your new favorite potato side dish to serve with any main course, Cheesy Roasted Potatoes! These are little bites of potato heaven. Potatoes are tossed in a buttery garlic mixture, then roasted until crisp and smothered with melty cheese.

They key to making the texture of the potatoes perfect is parboiling the potatoes before which means to just slightly boil them to make them tender before roasting. This will help ensure the potatoes are extremely creamy, soft, and delicious in the inside.

Key Ingredients

  • Yukon gold potatoes: I love the skin on for extra flavor and texture but you can peel it off. Other alternative potatoes you can use are baby potatoes, Russet potatoes, fingerling potatoes, red potatoes, or just about any of your favorites.
  • Olive oil: Has the most flavor but you could also use canola oil.
  • Butter melted: We coat the potatoes in a melted butter mixture. I use salted butter for more flavor.
  • Seasonings: Garlic powder, onion powder, Italian seasoning, salt, and black pepper.
  • Cheese: Grated parmesan cheese and sharp cheddar cheese are my favorites to use for these potatoes. I always prefer to grate and shred my own cheese to make it extra melty. See below for a list of different cheeses you can use.

How To Make Cheesy Roasted Potatoes

Parboil potatoes: Cut potatoes into 1 – 1 1/2 inch chunks and bring a large pot of salted water to a boil. Place potatoes and cook until tender, about 10-12 minutes. You want the potatoes to be tender- not too soft. Drain potatoes and place on a layer of paper towels, pat as dry as you can to remove any excess water.

Coat potatoes in butter mixture: Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or foil and lightly spray with cooking spray. In a large bowl, mix together the olive oil, melted butter, garlic powder, onion powder, Italian seasoning, salt, and pepper. Add the potatoes and gently mix and fold together until well coated.

Bake and flip: Place the potatoes onto the baking sheet and evenly distribute them with a spoon or spatula. Bake on the bottom rack for 30 minutes, checking half way to flip potatoes. The bottom of each potato will be golden brown and that’s what we want!

Add cheeses: Add parmesan cheese and cheddar cheese all over the tops of the potatoes and place back in the oven so the cheese can melt for 5 more minutes. Remove and garnish with chives and let cool for a few minutes before serving. Enjoy!

Recipe Variations & Tips

  • Add spice: Add red pepper flakes or your favorite hot sauce to the potatoes to add some heat.
  • Cheese: You can use any of your favorite combination of cheeses for the toppings. It’s important to have one cheese thats semi-salty (like parmesan) and the other extra melty. Others to use in-place of the cheddar cheese is Colby, Monterey Jack, white cheddar, mozzarella, pepper jack, and provolone. Other cheeses to use in-place of the parmesan cheese is pecorino Romano and asiago.
  • Cheesy bacon potatoes: Add crumbled crispy bacon to the top of the potatoes when you add the cheeses.
  • Toppings: Dollops of sour cream, thinly sliced green onions, more cheese, chopped parsley, fresh herbs, or Ranch dressing.
  • I do not recommend preparing the potatoes ahead of time as the potatoes turn brown quickly once they’ve been cut. If you really want to, make sure to submerge the potatoes in cold water after they’ve been cut.
  • Potato wedges: Instead of cutting these into cubes, cut them into potato wedges. Make sure they are all the same size.
  • Leave the skin on: This is optional but I find the potatoes have more flavor when you leave the skin on. The skin helps the potatoes get extra crispy on the outside.

Leftovers & Storage

Place any leftover potatoes in an airtight container or cover dish with plastic wrap. Store for up to 4-5 days. When ready to reheat, place in the microwave or oven to bake until warmed and cheese is melted.

Ingredients

  • 1.5-2 pounds Yukon Gold potatoes skin on or off

    I love how these cheesy roasted potatoes are a delicious side that can be served up with just about any meal. My kids are not huge fans of potatoes but they will eat them if they are crispy.
