Lucky Charms Marshmallow Treats

Growing up, Lucky Charms was my favorite cereal. I just don’t eat them like I used to and this recipe is a great way to indulge in my favorite old school treat. These Lucky Charms Rice Krispie Treats are so easy to make and require 4 ingredients and take 15 minutes to make!

I love using both Lucky Charms cereal and Rice Krispies cereal because the Rice Krispies cereal gives these bars the texture of an original Rice Krispies treat and the Lucky Charms cereal gives these bars a special touch, especially the magical marshmallows. Both kids and adults will love these Lucky Charms treats.

Since these treats are loaded with those magical Lucky Charms marshmallow, this is a great recipe to make for St. Patrick’s Day, parties or school treats. Other St. Patrick’s Day treats to try are my Lucky Charms Snack Mix or Thin Mint Cookie Muddy Buddies.

Why You’ll Love These lucky charms treats

Portable: Bring these sweet treats anywhere by easily placing treats in an airtight container or ziplock bag. Pack them up for St. Patrick’s Day parties, lunchboxes, school snacks, treat bags or classroom parties.

Easy recipe: Requires only 4 simple ingredients and take 15 minutes to make.

No bake treat: You don’t need to turn on your ovens, in fact, you can even melt the butter and marshmallow mixture in a microwave-safe bowl if you wanted to.

Easy to customize: Add extra marshmallows on top, sprinkle on green M&Ms, or drizzle with white chocolate, so many cute options.

Extra gooey: These are extra soft and gooey since we add extra marshmallows.

Key Ingredients

  • Rice Krispie cereal or crispy rice cereal: The main ingredient and base of this recipe. Any rice krispie brand will work.
  • Mini marshmallows: You’ll need 10 ounces of mini marshmallows plus 2 cups to make extra gooey treats. The marshmallows will melt and bind the other ingredients together. Mini marshmallows works best for this recipe as opposed to the large marshmallows.
  • Lucky Charms: Adds crunchy cereal plus those iconic marshmallow “charms” for the sweetest, most colorful bites.

How To Make Lucky Charms rice krispie Treats

Prepare baking dish: Line a 13 x 9 inch baking dish with parchment paper and lightly coat with nonstick cooking spray.

Melt marshmallows: In a large pot or large saucepan over low heat on a stove to, melt butter. Once the butter has melted, stir in the marshmallows and stir constantly until melted. Be sure not to let the marshmallows brown, they will burn quickly.

Add cereal mixture: Once the marshmallows are melted remove from heat and stir in the cereal until evenly coated.

Add to baking dish to set and cool: Pour the mixture into the prepared baking dish and press mixture evenly (coat a spatula with nonstick cooking spray on both sides or coat your hands so the mixture doesn’t stick). Add Lucky Charms marshmallows to the tops of the treats (optional). Allow to cool for a few minutes and slice into bars.

Pro Tips & variations

  • Don’t press too hard: When pressing the cereal mixture onto the prepared baking sheet, be sure to coat your hands or both side of a spatula to avoid getting your hands sticky!
  • White chocolate dipped: Dip the bottoms of these bars in melted white chocolate or almond bark. They will resemble the classic Lucky Charms Bars that you can buy at the store.
  • Extra festive: Add green sprinkles or drizzle with melted green candy melts to the top of the prepared treats to make these extra festive for St. Patrick’s Day.
  • Spray your hands or use a buttered rubber spatula: Use either cooking spray or rub them with butter before you press the rice krispie mixture on into your dish. This will prevent your hands from sticking to the sticky mixture. You can also use a butter wrap to press the mixture.
  • Brown the butter: If you’ve ever had Brown Butter Rice Krispie Treats, you already know how amazing they are. Follow the steps in this recipe to brown the butter first before adding the marshmallows. This will add a rich, caramel, nuttiness flavor to your treats.
  • Alternative cereal: Chex cereal, Chocolate Rice Krispies, or Cheerios would also work since they don’t have any added flavors or colors.

F&Q

Can You Use Marshmallow Fluff Instead Of Marshmallows?

You can, however, I don’t recommend it because it will take away from the fluffiness and softness. It will also be extra sweet since extra sugar is added. I’ve never used marshmallow fluff so if you do try it, let me know.

How To Keep Treats Soft?

Keep them away from the refrigerator as they will get hard and the marshmallows will loose their softness and gooeyness. You also want to store leftovers in a sealed airtight container and keep out as much air as possible.

Can I Freeze Rice Krispie Treats?

You can. However, it can cause them to be less soft and gooey so I do not recommend it.

Place cooled treats in an airtight container and layer with wax or parchment paper to prevent them from sticking. Be sure to let the treats sit out at room temperature for at least 15 minutes or until softened before serving again. Store for up to 1 month.

Leftovers & Storage

To-store on counter: Place leftover rice krispie treats in an airtight container or cover a plate tightly with plastic wrap. If you need to layer the bars, I recommend placing a piece of parchment paper or wax paper in between each layer. They will store for up to 4-5 days without tasting stale. You can also store in a large ziplock bag.

To-store in the refrigerator: These treats will last a bit longer if you store them in the refrigerator. They will store well for up to 1 week. Be sure to let sit out for at least 30 minutes because they will become hard.
