I love when dinners take less than 30 minutes! This Healthy Chicken Tortilla Soup is perfect for when you want a deliciously wholesome meal but don’t have a ton of time to spare in the kitchen. Made with a slightly creamy chicken tomato base broth and loaded with chunks of rotisserie chicken, veggies and all of the other hearty chicken tortilla soup essential ingredients. 

I love how quickly this soup can come together. I’m a huge fan of rotisserie chickens because they are precooked, convenient and always packed with so much wonderful flavor. You also have the option of roasting your own chicken or using shredded chicken breasts if you prefer!

You can make this a Vegan Chicken Tortilla Soup by omitting the chicken and adding an extra can of beans and using vegetable broth instead of chicken broth.

INGREDIENTS TO MAKE HEALTHY CHICKEN TORTILLA SOUP

  • Olive oil
  • Yellow onion
  • Garlic
  • Low-sodium chicken broth
  • Corn
  • Black beans
  • Tomato sauce 
  • Green chiles
  • Chili powder
  • Ground cumin
  • Paprika
  • Salt
  • Crushed tortilla chips
  • Rotisserie chicken
  • Milk or heavy whipping cream
  • Lime juice
  • Toppings: avocado chunks, crushed tortillas, lime wedges, cilantro, sour cream, shredded cheese

HOW TO MAKE HEALTHY CHICKEN TORTILLA SOUP

  1. In a large pot over medium heat, add the olive oil and onions. Cook until onions have softened, about 3 minutes then add garlic and cook for another minute.
  2. Pour in the chicken broth, corn, beans, seasonings, tortilla chips and chicken. Simmer for 15 minutes so all of the flavors can incorporate, stirring occasionally.
  3. Add the milk and lime juice and stir to combine. Serve with chunks of avocado, shredded cheese, cilantro, crusted tortilla chips and a dollop of sour cream! Enjoy!

HOW TO SERVE CHICKEN TORTILLA SOUP

My favorite way to enjoy this Chicken Tortilla Soup is by loading it up with toppings! This soup is already hearty and wholesome from the chicken, beans and veggies so it won’t take you too long to fill you up!  

Some favorite sides that I LOVE eating with this soup is my Homemade Guacamole and Pico de Gallo because you’ve already got the chips, you just need these dips!

Some other delicious ideas to serve with this tortilla soup is warmed tortillas, quesadillas or a side of my 30 Minute Cheese Enchiladas!

This soup is extra comforting because the broth is slightly creamy from the milk (or cream) and cheese. You don’t have to feel guilty for indulging in this soup because it’s protein and veggie packed!

HOW TO STORE HEALTHY CHICKEN TORTILLA SOUP

Leftover soup always makes great leftovers! Store any leftovers in an airtight container for up to 4-5 days. When ready to eat, you can microwave to reheat or warm on the stove.

FREEZER FRIENDLY 

It’s always a great idea to have freezer soup meals handy at all times. You will not be disappointed that this Healthy Chicken Tortilla Soup is conveniently in your freezer when you want a hearty lunch or dinner! 

To freeze, cool the soup completely then place in an airtight container or large heavy duty ziplock bag. You can also store the soup in individual containers so you don’t have to heat all of the soup at one time. This is great for grab and go lunch or dinners! 

Defrost soup by placing the soup in the refrigerator overnight or leave it out on the counter for a few hours. Reheat in the microwave or the stove.

Ingredients

  • 1 Tbsp. olive oil
  • 1 medium yellow onion; diced
  • 3 garlic cloves; minced
  • 6 cups low-sodium chicken broth
  • 1 15. ounce can corn; rinsed and drained
  • 1 14.5 ounce can black beans; rinsed and drained
  • 1 15. ounce can tomato sauce
  • 1 4 ounce. can green chiles
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 1/2 tsp. paprika
  • 1/4 tsp. salt
  • 3 Tbsp. crushed tortilla chips
  • 3 cups rotisserie chicken meat; about 1 whole chicken
  • 1/2 cup milk or heavy whipping cream
  • 1 whole lime; juiced

Chicken Tortilla Soup toppings (optional)

  • lime wedges
  • shredded cheddar cheese
  • sour cream
  • avocado chunks

    I just never get tired of making soup. And I love to experiment even if it the same type soup that I’ve been making over and over again. Your take on it is absolutely amazing!

    So good! I was serving adults who can handle a little spice so I sautéed some jalapeño with the onions and also toasted the spices in the pan a bit before adding the broth. I had a bag of Trader Joe’s fire roasted corn, so I used that instead of canned corn. Delish. Already planning to make this again for the freezer!
