Arugula Parmesan Salad

This Arugula Parmesan Salad is one of our favorites and serve it as a side with just about any meal. Arugula has a unique peppery flavor that pairs perfectly with freshly squeezed lemon juice and parmesan cheese. Not only is that salad so simple to make, it only takes 5 minutes to put together.

WHAT TO SERVE WITH ARUGULA PARMESAN SALAD

You can serve this salad as an entrée by adding grilled chicken, steak, shrimp or any other protein on top. You can enjoy this as an appetizer or side dish as well!

This salad is also great with my Homemade Pizza, Skinny Chicken Mac and Cheese, Beef Lasagna Stuffed Shells or my Crock Pot Rosemary Lemon Whole Chicken. You could also top this salad with my Homemade Croutons recipe!

Arugula leaves are tender and have a distinctive peppery and slightly bitter flavor. These leaves are full of nutrients and can be found at just about any grocery store year-round so you can make this salad any time!

INGREDIENTS

  • Arugula: peppery, fresh and delicious when paired together with these ingredients. 
  • Parmesan cheese: you can used shaved or grated parmesan cheese. I use a potato peeler to shave the parmesan cheese. 
  • Lemon juice: fresh is best! If you can, use freshly squeeze lemon juice.
  • Olive oil: the flavors from the olive oil are essential in this salad.
  • Salt + pepper: to taste, you be the judge of how much you want to add in your salad.

HOW TO MAKE ARUGULA PARMESAN SALAD

  1. In a large bowl, whisk together the olive oil and lemon juice until combined.
  2. Add the arugula and toss to evenly coat in the lemon and olive oil. Top with shaved parmesan cheese and add a pinch of salt and pepper to taste.

Ingredients

  • 4 cups fresh arugula
  • 1/4 cup shaved parmesan cheese
  • 2 1/2 Tbsp. fresh lemon juice
  • 2 Tbsp. olive oil
  • salt and pepper to taste

Notes

  1. Once the salad dressing is combined with the arugula and parmesan cheese, the salad may wilt if stored in the refrigerator but it will still be delicious. If you don't want your salad to wilt, be sure to store the dressing separately and do not combine with the arugula and cheese. This will allow the salad to stay fresh for up to 2-3 days.

    This is hands down my favourite salad. I love the combination of the bitter/peppery flavours in the arugula combining with the sweeter flavour in the parmesan. Delish! Thanks for the recipe.
