These are two desserts in one and is absolutely perfect for any occasion. Both brownie, cookie dough, and chocolate lovers will fall in love with this just after one bite! Chocolate Chip Cookie Dough Brownies

What can be better than Homemade BrowniesCookie Dough Brownies, of course because how you can you resist edible cookie dough combined with chewy brownies. Similar to my Brookie Recipe where cookie dough gets baked on top of brownie mixture.

These brownies are fully baked, then edible eggless cookie dough gets pressed on top so you get cookie dough with each bite. The best part is- you don’t have to worry about eating raw cookie dough. This edible chocolate chip cookie dough is perfectly safe to eat because it’s made egg-free and we heat treat the flour.

Key Ingredients

Brownies: you can make your own brownies from scratch or used a box mix.

Butter: I use unsalted butter so you can control the salt intake. If you use salted butter, be sure not to add any salt.

Sugar: we use both granulated sugar and brown sugar

Vanilla extract: enhances the flavors and adds the signature chocolate chip cookie flavor.

Milk: whole milk is preferred but you can also use low-fat, reduced fat, or almond milk.

Flour: all-purpose flour works best for this. I wouldn’t substitute whole wheat flour as it can change the flavor. You will need to heat treat the flour (see how in notes below).

Salt: just a pinch to balance out the sweetness.

Chocolate chips: I use semi-sweet chocolate chips, you can also use mini chocolate chips, milk chocolate, white chocolate, or dark chocolate.

How To Make Cookie Dough Brownies

PREPARE BROWNIES. Bake brownies accordingly to box in an 8×8 pan or 9×9 pan. Let cool completely.

MAKE COOKIE DOUGH. In a large mixing bowl with a stand mixer or electric hand mixer beat butter, sugars, vanilla extract, and milk together until light and fluffy. You want to be sure the sugars are well combined to prevent the cookie dough from being a grainy texture. Beat for at least 2 minutes or until light and fluffy.

ADD FLOUR & CHOCOLATE CHIPS. Reduce the speed and add the flour. Continue to mix and scrape down the sides of the bow. Mix until ingredients are incorporated and dough has formed. Stir in the chocolate chips.

ADD COOKIE DOUGH LAYER TO BROWNIES. Spread the cookie dough on top of the cooled brownies. Press down gently with your hands or use a spatula. Let the brownies set and chill in the refrigerator for 10-20 minutes. Cut into bars and enjoy!

Recipe Variations & Add-Inns

Add more chocolate: Top these brownies with a layer of melted chocolate drizzle or a chocolate ganache to make these even more chocolatey. If you really want to make these extra chocolatey, add chocolate chips to the top chocolate layer.

Mini Brownie Bites: Make these treats bite-size by cutting them into 32 bars instead of 16. These will make perfect Mini Brownies (ideal for parties, showers, classroom parties, and lunchbox treats).

Cream Cheese Brownies: swirl in cream cheese to the brownie batter before baking.

Cookie Dough Oreo Brownies: Add crushed or whole Oreos to the brownie batter and bake- then top the Oreo Brownies with the cookie dough. You can also add more crushed Oreos to the cookie dough if you wish.

Chocolate chips: Swap the semi-sweet chocolate chips for peanut butter chips, butterscotch chips, toffee bites, or white chocolate chips. You can customize the cookie dough to your preference.

Add sprinkles: Make these for a birthday or any type of celebration by adding sprinkles to the brownie batter, cookie dough or sprinkle them on top!

Use parchment paper: Be sure to layer the bottom of your brownie pan with parchment paper so the brownies can lift out of the pan easily.

Leftovers & Storage

To store leftovers: You can store these brownies for 2-3 days at room temperature in an airtight container or cover plate with plastic wrap. Store in the refrigerator for up to a week.

To Freeze: Seal cut brownies in plastic wrap and then place them in an airtight container or heavy duty ziplock bag. Freeze for 3 months. Thaw completely at room temperature before eating them

Is It Ok To Eat Raw Cookie Dough?

YES! It is with this recipe because we use an egg-free cookie dough and we heat-treat the flour.

No need to worry, friends! Heating the flour will kill any bacteria present if theres any in the raw flour. To heat the flour simple, place on a baking sheet and bake at 350 degrees F for about 5-10 minutes. You can also place the flour in a bowl in a microwave and heat on high for 20-45 seconds.

Recipe Notes: 
  • Heat-Treat Flour: Heating the flour will kill any bacteria present if theres any. To make raw flour safe to eat, place on a baking sheet and bake at 350 degrees F for about 5-10 minutes. Just be sure it doesn’t burn.  You can also microwave the flour which would be the quickest and easiest way. Place the flour in a bowl and heat on high for 20-45 seconds. Each microwave is different, so please be mindful of the temperature.
  • To-store leftovers: You can store these brownies for 2-3 days at room temperature in an airtight container or cover plate with plastic wrap. Store in the refrigerator for up to a week.
