BROOKIE RECIPE

What do you do when you have a sweet tooth and craving a rich fudgy brownie and a classic chocolate chip cookie? You make Brookies, of course! Anything that’s part brownie and part cookie is my kind of treat!

The bottom layer is made with decadent brownies and it’s topped with a layer of cookie dough making the most irresistible dessert, ever! You can definitely sub for homemade brownies and cookies if you wish. 

Brookies are perfect for all occasions, parties, and make fun birthday treats since we add rainbow sprinkles to the top of the brownies. Serve these semi-homemade brookies with a scoop of vanilla ice cream for the ultimate treat!

Semi-homemade: Since we use 5 ingredients, it doesn’t get any easier than this Brookies recipe!

Quick to make: You can make these cookie bars in less than 30 minutes and you don’t have to chill the dough or use any fancy kitchen equipment.

Portable: These bars are perfect for any occasion and can be transferred easily by placing them in an airtight container ziplock bag. Pack them up for Christmas, birthday celebrations, holiday parties, lunch box treat, or bring them to work.

Yields a large batch: Cookie bars are a great recipe to feed large crowds. One batch makes 24 regular sized bars but you can cut those in half to make 48 smaller bars.

Best flavors: You get two favorite desserts in one!

KEY INGREDIENTS

  • Boxed brownie mix: While this Brookie recipe calls for store-bought brownie mix, feel free to make homemade brownies from scratch or use your favorite box brownie recipe if you prefer. You’ll also need the ingredients on the box such as large eggs, oil and water. 
  • Pre-made chocolate chip cookie dough: Any pre-made chocolate chip cookie dough will work for this recipe. I also love using my homemade Brown Butter Chocolate Chip Cookie recipe for the topping when I have extra time. 
  • Sprinkles: This is totally optional but I love added rainbow sprinkles for fun. Switch up the sprinkle colors to celebrate different holidays and occasions.

HOW TO MAKE BROOKIES

Prepare pan: Preheat oven to 350F.  Prepare a 9×13 baking dish with nonstick cooking spray or line with parchment paper.  Set aside.

Make brownie layer: Make brownies according to directions and spread an even layer into prepared pan.

Make chocolate chip cookie layer: Using a medium cookie scoop, form 24 cookie dough balls from prepared dough and flatten with your hands to form a cookie dough layer. Place on top of brownie batter and add sprinkles.

Bake Brookies: Bake for 25-30 minutes or until the cookie dough is golden brown.  Allow to cool for about 10 minutes prior to slicing into bars and serving.  Enjoy!

brookie RECIPE VARIATIONS

  • Add nuts: Pecans, walnuts, almonds, and peanuts add a nutty crunch.
  • Chocolate chips: Mix in white chocolate chips, semi-sweet chocolate chips, or milk chocolate chip to. make extra chocolatey brownies. 
  • Toppings: Once cool, drizzle chocolate sauce or sweet caramel over the top. I like to add flaky sea salt too to enhance the flavors even more. 
  • Brownie Pie: Make in a cast-iron skillet and cut into triangular slices.
  • Cookie dough: Swap the chocolate chip cookie dough and use different cookie doughs such as peanut butter cookie dough, white chocolate macadamia nut cookie doughbrownie cookie dough, or sugar cookie dough

leftovers & storage

To Store: Store leftovers in an airtight container or wrap dish with plastic wrap and store at room temperature for 1 week.

To Freeze: Wrap cooled brownie with plastic wrap and then tightly with foil. You can also freeze each brownie square if you prefer and place in a freezer bag. Freeze for up to 3 months. To thaw, let the brownies sit out on the counter for a few hours.

FAQ

HOW DO I KNOW WHEN BROOKIES ARE DONE?

Because Brookies are two separate batters they need to bake for 30 minutes.  When the cookies start to turn golden brown on top you will know they are done. Brookies may seem soft straight from the oven but will stiffen up and continue to cook as they cool.  

You can also insert a toothpick into the middle of the brownie cookie bars.  The batter should be slightly gooey but not wet when a toothpick is removed. 

CAN I MAKE THESE IN A MINI MUFFIN PAN?

Of course! Brownie mix will still be prepared according to box directions.  To assemble, see below:

  • Grease or line muffin pan with paper liners
  • Using a tablespoon or a small cookie scoop, measure out 1 tablespoon of brownie batter and place at bottom.  Top brownie batter with 1 tablespoon of cookie dough.  
  • Smooth out cookie dough using a spoon or small palette knife
  • Bake in preheated oven for 18 minutes or until a toothpick comes out clean. 
  • Allow brookies to cool in pan for 10 minutes before transferring to wire rack to finish cooling.

    Easiest brookies ever! These absolutely hit the spot with a scoop of vanilla ice cream and some chocolate syrup on top! The only thing I did different was added nuts to ours. So good!
