Cake Mix Lemon Crinkle Cookies

These Cake Mix Lemon Crinkle Cookies are one of my favorite recipes to bake, especially in the Spring because they are bursting with lemon flavor and fresh lemon zest. They are seriously the easiest cookies to make and they are SO delicious!  

The light powdered sugar coating on the outside of theses Lemon Cookies makes these cookies extra special and gorgeous too!

I’m a HUGE fan of Cake Mix Cookies. They are truly the easiest and tastiest cookies to make and I love using different cake mixes for different cookies. If you love Cake Mix Cookies just as much as I do, try my Strawberry Cake Mix Cookies, Funfetti Cake Mix Cookies or Spice Cookies. These Spring Cake Mix Cookies are also delicious and colorful too!

Since I’ve been pregnant, I haven’t crave too many things and I hardly crave sweets anymore. However, I am always in the mood for anything lemon flavored lately and these cookies hit the spot! 

Lemon Cookies

The Lemon Cake mix has everything you need in these cookies plus a few simple extra ingredients like eggs and oil which make the base cookie dough for any cake mix cookies. I love adding the extra lemon zest because it gives these cookies an extra zesty flavor that is perfect for Spring. 

If you’re wondering, what is a Crinkle Cookie? It’s simply a cookie that’s rolled into powdered sugar before baking and it makes beautiful crackles on the cookie as it bakes. It looks magical! 

Lemon Cookie Steps

INGREDIENTS TO MAKE CAKE MIX LEMON CRINKLE COOKIES

  • Lemon cake mix
  • Eggs
  • Vegetable oil
  • Lemon zest
  • Powdered sugar

HOW TO MAKE CAKE MIX LEMON CRINKLE COOKIES

MIX. In a large bowl, mix together the eggs, oil, cake mix and lemon zest until combined.

ROLL. Place the powdered sugar in a shallow bowl or dish. Use a mini ice cream scoop (equivalent to 2 tablespoons) and roll cookie dough into powdered sugar until evenly coated.

BAKE. Place on prepared cookie sheet and bake for 7-9 minutes or until the cookies are set and no longer doughy or too soft. Let the cookies cool for a few minutes before transferring them to a cooling rack.

CAKE MIX COOKIES BAKING TIPS

  • If you find that the dough is a bit sticky, place the dough in the refrigerator for a few minutes so its easier to work with. 
  • Add sprinkles to these cookies if you want to add some color or if you are baking these for a birthday celebration or Easter!
  • Be sure not to over bake these cookies. You won’t be able to see the edges brown so you will know they are ready once they are set and aren’t too soft. If you over bake them, they will get hard. The bottoms of these cookies will be a light brown when baked properly.

Easy Lemon Cookies Recipe

LEFTOVERS AND HOW TO FREEZE COOKIES

Store leftover Lemon Cookies in an airtight container at room temperature. They will stay fresh for up to 4-5 days. 

To freeze the cookies, allow the baked cookies to cool completely. Place the cookie sheet in the freezer for 30 minutes to flash freeze or harden. Once hard, place the cookies in a large ziplock bag or stack in an airtight container. Store for up to 3 months- when ready to serve, remove from the freezer to defrost for at least 2 hours.

Ingredients

  • 2 large eggs

  • 1 box lemon cake mix
  • zest of 1 whole lemon

    These are soooo yummy! I also roll them in granulated sugar prior to the powdered… it makes the powdered sugar stick and stay bright. Thank you for this recipe – it’s my favorite.
