Circus Animal Cookie Blondies

So this recipe is a Pinterest inspiration. Once I came across this recipe, I knew I had to make it–especially because I used to love good old fashioned Circus Animal Cookies! Mostly because they were pink and had sprinkles, and always remind me of a childhood treat. Anyways, I used a basic butter cake recipe and added a ton of sprinkles, then topped it with Circus Animal Cookies.

Circus Animal Blondies

Circus Animal Blondies

Imagine a buttery cake loaded with sprinkles, and then topped off with old fashioned Circus Animal Cookies! It's a one of a kind unique and tasty treat!

Ingredients

3/4 cup unsalted butter; room temperature

1 cup sugar

3 eggs

1 1/2 tsp vanilla extract

2 cups all-purpose flour

1/2 tsp salt

2 cups of Circus Animal cookies

1/2 cup sprinkles

Instructions

  1. Preheat oven to 325 degrees F. In a mixer, cream the butter and sugar until creamy and fluffy. Add eggs, one at a time until combined. Add vanilla extract and mix for another 30 seconds until mixture is smooth and combined.
  2. Add the flour and salt and mix until the dough starts to come together. It will be a thicker cake batter. Fold in the sprinkles until combined.
  3. Grease a 9 x 13 inch baking dish and pour batter evenly. Top with cookies and more sprinkles. (You may also add chop cookies to your batter as well).
  4. Bake for 30 minutes or until g0lden brown. Let cool on wire rack. Slice into square and serve. Enjoy!

Funfetti Cake Batter Bars

Funfetti Cakes are my favorite cakes to bake because of all the SPRINKLES!!! Back in my college days, me and my friends/roommates would make cookies out of cake mix occasionally because it was so easy and took a few minutes to bake..plus they make the best cookies if you have a major sweet tooth like me. I changed up the recipe a bit and made these cookies into bars and added a LOT more sprinkles and chocolate. These are so fun and pretty to eat!

Yield: 12

Ingredients:
1 box of funfetti cake mix
1/2 cup melted butter
2 eggs
1 tsp vanilla extract
1 tsp corn starch
1/2 cup sprinkles
1/2 cup white chocolate chips

Steps:
1. Preheat oven to 350 degrees. In a mixing bowl, mix together cake mix, melted butter, eggs, vanilla extract, corn starch, sprinkles, and white chocolate chips. (Save a few sprinkles and white chocolate chips for the topping!)

2. Lightly grease a 9 x 9 inch baking pan and smooth out cake mixture until even. Top with more sprinkles and white chocolate chips and put in oven and bake for 25-30 minutes. Let cook for 15 minutes after (it will cook a little more during the cooling process!). Cut into bars and enjoy!

Lemon Bars

Yield: 12

Ingredients:
For dough
1 cup butter; at room temperature
1/2 cup sugar
2 1/2 cups flour

For filling
4 whole eggs
2 large lemons
2 tsp lemon zest
1 1/2 cup sugar
1/4 cup flour

Steps:
1. Preheat oven to 350 degrees F. In a mixing bowl, combine butter, sugar, and flour. Combine until dough is formed. Add more flour if dough is too sticky. In a 9×13 inch baking dish, evenly press dough in dish. Bake for 20 minutes or until crust is golden brown.

2. In another mixing bowl, beat eggs, and squeeze the juice of 2 lemons (remove any seeds), add zest, and sugar by adding 1/2 cup at a time, and then flour. Whisk until lemon mixture is well combined. Pour over baked crust and bake for another 20-25 minutes. Sprinkle with powdered sugar and let cool for at least 20 minutes. They taste the best when they are cold so I highly recommend putting the bars in the refrigerator. Cut into bars and enjoy!

Peanut Butter Chocolate Crunch Bars

Yield: 8

Ingredients:
4 cups of rice krispies
1 1/2 cup peanut butter
3/4 cup light corn syrup
1/4 cup honey
1 tsp vanilla extract
1/2 cup chocolate chips

Steps:
1. In a microwavable bowl, mix peanut butter, corn syrup, honey, and vanilla. Microwave for 2 minutes or until everything is melted.

2. In a large mixing bowl add rice krispies, and peanut butter mixture. Stir until cereal is well combined. Add mixture to a 9×13 inch baking pan, sprinkle chocolate chips on top, and flatten with spatula. Place in refrigeratir for 30 minutes. Cut into any shape you want! I like to do squares or triangles!
