CHOCOLATE CHIP COOKIE BAR RECIPE

If you love Chocolate Chip Cookies you will absolutely love this Chocolate Chip Cookie Bar Recipe! These bars have all the same flavors of classic Chocolate Chip Cookies but these are easier to make!

I bake this Chocolate Chip Cookie Bar Recipe in a pan instead of making them into cookies and scooping out the dough. I use mini chocolate chips in these bars because I love the smaller bits of chocolate.

This recipe will definitely be able to cure any chocolate chip cookie cravings without having to spend too much time in the kitchen!

On of the secrets to making these cookies extra buttery is using melted butter. You wouldn’t be able to do this when making regular chocolate chip cookies as they would turn into pancakes! Another secret is using more brown sugar than granulated sugar to increase the chewiness of the bars. These bars are extra soft because I add an extra egg yolk to the dough.

It’s a good thing the holidays are right around the corner because my Gingerbread Cookie Bars have been on my mind. If you love cookie bars and gingerbread, you need to try these!

INGREDIENTS 

  • All-purpose flour
  • Salt
  • Baking soda
  • Unsalted butter
  • Brown sugar
  • Granulated sugar
  • Egg
  • Egg yolk
  • Vanilla extract
  • Mini chocolate chips

HOW TO MAKE THIS CHOCOLATE CHIP COOKIE BAR RECIPE

  1. Preheat oven to 350 degrees F. Line a 9″ x 13″ metal baking pan with heavy duty foil or parchment paper, letting the excess hang over the edges so it will be easier to lift the bars out. Lightly spray the foil-lined pan with non-stick spray. This will allow you to lift the bars out of the pan, for clean cuts.
  2. In a medium mixing bowl, whisk together flour, salt, and baking soda; set aside. In a large mixing bowl, whisk together melted butter, brown sugar, and sugar until combined. Add in egg, egg yolk, and vanilla extract. Continue to whisk until well combined.
  3. Gradually stir dry ingredients into wet ingredients until completely combined. Stir in chocolate chips. Be sure not to over-mix.
  4. Transfer mixture to prepared pan- please not the mixture will be thick like cookie dough. Press the dough evenly into pan using your hands or a spatula.
  5. Bake for about 23 minutes or until the top is light golden brown and slightly firm. If you want your bars to be on the chewier side, bake for 20-21 minutes. Let the cookie bars cool for 5 minutes and then lift bars out of the pan and transfer to a wire rack. Once cooled, cut into 12 large square bars or 24 mini square bars with a sharp knife. Enjoy!

TIPS FOR MAKING THE BEST CHOCOLATE CHIP COOKIE BARS

  • Make this for a birthday or celebration by adding 1 cup of sprinkle to the cookie dough! If you love cookies over cake, make this into a birthday cake by adding frosting to the top and candles!
  • You can use regular milk chocolate chips, dark chocolate chips, white chocolate chips, or a combo of them for this recipe
  • I love eating these within 20 minutes of when they come out of the oven. Particularly with a scoop of vanilla ice cream on top 🙂 These bars will harden and become firm as they cool

LEFTOVERS + A TRICK

These Chocolate Chip Cookie Bars will stay fresh for 3-4 days if stored properly. Store in an airtight container or a large ziplock bag. Be sure to store in a cool and dry area.

Here’s a helpful trick to ensure these cookie bars stay soft: place a slice of regular white bread in with the cookies. The cookies will absorb moisture from the bread, keeping them soft longer. Be sure to use white bread if possible so it won’t transfer any other flavors.
