- Brie cheese: The star ingredient! We leave the off to make the dip extra creamy. We use about a 16 oz wheel of brie.
- Prosciutto: We bake the prosciutto until crisp and then chop it into small pieces for salty, savory bites.
- Pistachios: Crushed or chopped adds crunch, color and nutty flavor.
- Hot honey: Store-bought or homemade adds sweetness and a little kick. Feel free to use regular honey if you don’t want any heat.
- Herbs: Use fresh or dried herbs such as thyme leaves, rosemary or parsley to add more flavor.

Remove the cheese rind: Use a sharp know to remove rind from the chilled brie and cut into cubes. Let the brie sit at room temperature to soften.
Make prosciutto crisps: In the meantime, preheat oven to 425 degrees F. Lay prosciutto into little nests and bake for 10-12 minutes, or until crispy. Let cool then chop the prosciutto into little pieces.
Whip cheese: Place the brie cheese cubes in a food processor and pulse to whip for a 3 minutes. Scrape the sides with a rubber spatula and then pulse again for 3 more minutes. Scrape the sides once more and then whip for 2 more minute until creamy and fluffy.
Transfer the dip to a bowl and assemble: Spread it out evenly with a spoon. Drizzle hot honey on top then sprinkle prosciutto pieces, pistachios and fresh thyme and or rosemary all around the top. Serve with your favorite dipping crackers or baguette slices and enjoy!

recipe tips & variations
- Different nuts: Try walnuts, pecans, or toasted almonds instead of pistachios.
- Milder Brie Bread: Use regular honey instead of hot honey for a kid-friendly version.
- Other toppings to add: Olives, red chili flakes, sun-dried tomatoes, tart cranberries, garlic butter, fig jam and a drizzle of olive oil make great additions.
- Low carb dish: Make this into a low carb snack by dipping your favorite fresh vegetables in this dip such as cucumbers, bell peppers, celery sticks and/or carrots.
- Garlic flavor: If you want garlic flavor, add roasted garlic, garlic powder or minced garlic to the dip.

leftovers & Storage
Store any leftovers in an airtight container or cover bowl with plastic wrap or foil for up to 4-5 days. Once you are ready to serve the dip, let it sit at room temp for 15–30 minutes to soften, then stir and whip it again (a spoon works, or a quick blitz in the food processor) to bring back that fluffy texture.
I do not recommend freezing this dip as it will change the texture completely.
