- 13-16 ounces brie cheese remove rind
- 4 slices prosciutto
- 2-3 tablespoons hot honey or regular honey
- 2-3 tablespoons roasted and lightly salted shelled pistachios
- fresh herbs such as thyme and rosemary optional
Use a sharp know to remove rind from the chilled brie and cut into cubes. Let the brie sit at room temperature to soften.
In the meantime, preheat oven to 425 degrees F. Lay prosciutto into little nests and bake for 10-12 minutes, or until crispy. Let cool then chop the prosciutto into little pieces.
Place the brie cheese cubes in a food processor and pulse to whip for a 3 minutes. Scrape the sides with a rubber spatula and then pulse again for 3 more minutes. Scrape the sides once more and then whip for 2 more minute until creamy and fluffy.
Transfer the dip to a bowl and spread it out evenly with a spoon. Drizzle hot honey on top then sprinkle prosciutto pieces, pistachios and fresh thyme and or rosemary all around the top. Serve with your favorite dipping crackers or baguette slices and enjoy!
