Cosmic Brownie Cookies

Cosmic Brownie Cookies are inspired by the classic Little Debbie version and these are even better! Loaded with rich chocolate flavor and has a chewy, dense, and fudgy texture. We top them with a homemade (but easy) chocolate frosting and colorful sprinkles. 

These are a chocolate lovers dream dessert. They are easy to make, especially since we use chocolate cake mix and we basically make the frosting in the microwave. Cosmic Brownie Cookies are jumbo size so they are extra thick and makes for an indulgent treat.

key ingredients

  • Chocolate Cake Mix:  We use one box of chocolate cake mix. Betty Crocker, Pillsbury and Duncan Hines are all great cake mix options.
  • Melted butter: Make sure the butter is melted cooled. Alternatively, you could use vegetable oil or canola oil instead. 
  • Whole egg and egg yolk: This will help make the cookies extra rich and fudgy.
  • Vanilla extract: Add a warm flavor.
  • Semi-sweet chocolate chips: The more chocolate the better! I prefer semi-sweet or dark chocolate chips over milk chocolate chips because it’s less sweet but feel free to use your favorite type of chocolate chips.
  • Candy sprinkles: I love the classic rainbow chips (can be found at most grocery stores in the baking aisle) to look exactly like the original cosmic brownies, but of course you could use any rainbow sprinkles or even mini M&M candies.
  • Milk: You can also use heavy cream to make the frosting.

Make cookie dough: In a large mixing bowl with an electric mixer, wooden spoon, or the bowl of a stand mixer. Mix all of the cookie ingredients together except for the sprinkles. Be sure to scrape down the sides of the bowl with a spatula. The dough will come together quickly.

Scoop and chill dough balls: Using a large cookie scoop that’s equivalent to 1/4 cup to scoop into giant cookie dough balls, you should get about 10 dough balls. Place on a cookie sheet or sheet tray and place in the refrigerator to chill for 15 minutes.

Bake: Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper. Place about 5 cookie dough balls on prepared baking sheets. They will spread! Bake cookies for 14-15 minutes or just until the edges looks crispy and the tops should be set and crackly. Remove from oven and let cool for a few minutes before transferring to a cooling rack.

Make chocolate ganache: Add milk and butter to a microwave-safe or heatproof bowl or cup. Microwave until milk is warm and butter is melted, about 1- 1 1/2 minutes. Add chocolate chips to the warmed milk and let sit for a few minutes to melt. Stir until chocolate chips are completely melted and smooth.

Frost cookies: Once the cookies are slightly cool, spread 1-2 tablespoons of the chocolate ganache frosting, then top with rainbow sprinkles. Let the chocolate set to harden. You can place the cookies in the refrigerator to help the frosting harden. Enjoy!

RECIPE TIPS

  • Add more chocolate: We use 1 cup of chocolate chips but feel free to use more if you want even more chocolate flavor.
  • Add coffee flavor: Add 2-4 tablespoons of espresso powder to give your cookies a coffee flavor.
  • Fudgy brownie cookies: If you want your cookies to be an extra fudgy and gooey cookie, remove them from the oven a few minute earlier. They will continue to bake while they cool.
  • Gluten-Free Cookies: Use gluten-free cake mix to make these cookies gluten-free.
  • Chill the cookies: Similar to Crumbl cookies, chill the cookies once you add the ganache frosting and sprinkles to make them extra indulgent.

Can I make these into Cosmic brownie bars?

Yes! I would recommend using a 13×9 inch baking dish and line with parchment paper. Once cookie dough comes together, transfer to baking dish press into an even layer. Bake and then frost and add sprinkles to the cooled chocolatey brownies.

leftovers & storage

To-store: Store cookies at room temperature in an air-tight container or large ziplock bag. They will stay fresh for 3-4 days. They will still be ok to eat after, but they may start to get crumbly and stale. 

To-freeze: Allow the baked cookies to cool completely. Place the cookie sheet in the freezer for 30 minutes to flash freeze or harden. Once hard, place the cookies in a large freezer bag or stack in an airtight container. Store for up to 3 months- when ready to serve, remove from the freezer to thaw until softened.
