This Classic One-Pot Chunky Beef Stew makes a perfect Fall or Winter dinner. Loaded with hearty vegetables and tender beef chunks simmered in a delicious beef broth.

Chunky Beef Stew

This one-pot Chunky Beef Stew is made in a dutch-oven and has all the classic stew fixings such as chunks of beef, carrots, celery, potatoes and peas.  First the beef chunks get browned with onions and garlic, and then the hearty stew is simmered in a delicious beef-wine broth base. This delicious dinner comes together in less than hour and a half.

The most effort made in this stew recipe is chopping all of the veggies, that’s it! Once all the ingredients are added to the pot you let it simmer for an hour and it’s done! This is a one-pot wonder recipe and it’s too easy to put together.

Serve this Beef Stew with a fresh batch of Olive Herb Focaccia or Rustic Olive Bread!

I love how this one-pot meal can fed a crowd and it makes the best leftovers. You can even make this stew the day before if you want to save some time!

This Chunky Beef Stew is the absolute perfect dinner when you are craving comfort or when it’s chilly out and you just want to warm up with something delicious. We live in California so it doesn’t get too chilly- but chilly enough where we crave this over and over. All of the flavors are slowly simmered and melt together making the beef super tender and the all of the flavors intensify. 

I love how aromatic this Chunky Beef Stew is leaving the house smelling cozy with all of the delicious flavors in the stew. From the tender pieces of beef to the chunks of carrots, potatoes, celery, peas, beef broth, herbs and red wine. 

Chunky Beef Stew

INGREDIENTS TO MAKE CHUNKY BEEF STEW

  • Stew meat
  • Flour
  • Salt + pepper
  • Olive oil
  • Yellow onion
  • Garlic
  • Carrots
  • Celery
  • Tomato paste
  • Dried rosemary
  • Dried thyme
  • Beef broth
  • Baby potatoes
  • Red wine
  • Bay leaves
  • Frozen peas
  • Corn starch

HOW TO MAKE CHUNKY BEEF STEW

  1. Whisk together flour, salt and pepper together into a shallow bowl. Toss stew meat in flour mixture and coat.
  2. Bring a large dutch oven or soup pot to medium heat and add olive oil and floured stew meat. Cook the stew meat for 5 minutes, or until browned. Be sure to scrape down the bottom of the pot to get any brown bit pieces that will add flavor. Add in onions and garlic and stir for a few minutes until onions are translucent.
  3. Add in carrots, celery, potatoes, tomato paste, beef broth, wine, rosemary, thyme and bay leaves. Season with salt and pepper and stir to combine all ingredients. Simmer on low for 1 hour.
  4. Whisk together 1/2 cup of water and 1 tablespoon of cornstarch until combined (this is called making a slurry). Add to the stew mixture along with the peas and let cook for 10 more minutes until stew has thickened. Serve with crusty bread and enjoy!

Hearty Chunky Beef Stew

FREEZER FRIENDLY

This Chunky Beef Stew is ideal for making ahead and freezing! Once you cook your beef stew, let it cool completely and transfer to an airtight container or heavy duty zip-lock bags. You can also portion out the stew into smaller containers if you want to defrost it in smaller batched. The beef stew can last up to 3 months in the freezer. 

To defrost the stew, let it defrost in the refrigerator overnight and reheat in a pot on the stove. You can also defrost the stew in the microwave- time will vary based on the size.

LEFTOVERS

Store leftover stew in an airtight container in the refrigerator for up 3-4 days. When ready to eat again, reheat on the stove or microwave.

Ingredients

  • 2 lbs. beef stew meat
  • 1/3 cup flour
  • 1/2 tsp. salt plus 1/4 tsp. more to season
  • 1/2 tsp. black pepper plus 1/4 tsp. more to season
  • 2 Tbsp. olive oil
  • 1 medium yellow onion; chopped
  • 4 cloves garlic; minced
  • 4 large carrots; chopped
  • 4 stalks celery; chopped
  • 1 lb. baby potatoes cut in quarters
  • 1/4 cup tomato paste
  • 4 cups beef broth
  • 1/2 cup red wine
  • 1/2 tsp. dried thyme
  • 1 tsp. rosemary; dried or fresh)
  • 2 bay leaves
  • 1 cup frozen peas
  • 1 1/2 Tbsp. corn starch
  • 1/2 cup water
