This easy cheesy Brussels Sprouts Casserole makes a delicious side dish for the holidays. Tender pieces of brussels sprouts are coated and baked in a creamy cheese mixture. This will be your new favorite side dish!

If you are looking for a simple, easy and delicious side dish for your next holiday or dinner, this Brussels Sprouts Casserole is perfect and it’s loaded with veggies too! The creamy and cheesy sauce that coats each brussels sprout takes this recipe to another level. 

The creamy smooth cheese sauce is made with 3 different cheeses to make this even more rich and delicious. This casserole dish is flavor packed and is a great way to get your kids to eat veggies! You won’t get over how incredible the Brussels Sprouts taste after they have been bathing in a bubbly and creamy cheese sauce in the oven.

This recipe is truly so easy to make and this side dish can be made in less than an hour. If you are one of those people who likes to prep the night before a big holiday, you can make this ahead of time!

MAKE AHEAD OF TIME

We can all use any tips or tricks to make the holidays a breeze especially when it comes to cooking. Make this recipe the night before to save you 40 minutes in the kitchen. Save your stove and oven for something else the day of!

Follow recipe steps 1 through 5. Cover the casserole dish with plastic wrap or foil and place in the refrigerator until ready to bake the next day. Bake accordingly to directions, you may want to add a few minutes to ensure all of the cheese sauce is completely melted.

INGREDIENTS TO MAKE BRUSSELS SPROUTS CASSEROLE

  • Brussels Sprouts 
  • Butter
  • Olive oil
  • Garlic
  • Shallot
  • All-purpose flour
  • Milk
  • Cream Cheese 
  • Salt + pepper
  • Montery Jack cheese or Gruyere 
  • Mozzarella cheese
  • Parmesan cheese

HOW TO MAKE BRUSSELS SPROUTS CASSEROLE

  1. Preheat oven to 375 degrees F. In a large frying pan over medium heat, combine the butter, oil, garlic, shallot, salt and pepper. Sauté until the shallots are tender, about 2-3 minutes. Add the brussels sprouts and stir to coat in the oil and butter. Cook until sprouts have softened, about 5 minutes.
  2. Remove the brussels sprouts mixture from the frying pan and set aside.
  3. In the same frying pan over low heat, melt the butter and once butter has turned frothy, whisk in the flour until it turns into a paste. Slowly pour in the milk and add the cream cheese whisking continuously ensuring no lumps form and the butter and flour are incorporated. Season with salt and pepper.
  4. Raise the heat to medium and continue to whisk until the mixture is simmering and small bubbles form. Stir in the cheeses until they have melted and the cheese sauce has thickened, about 5 minutes. The cheese sauce will coat the back of a wooden spoon when done.
  5. Add the cooked brussels sprouts to the cheese mixture and stir until all of the brussels sprouts are drenched in the cheese sauce. Pour into an 8 x 8 inch baking dish and top with more cheese!
  6. Bake for 15-20 minutes.

Look at all of that creamy goodness from the cheese sauce. The key to getting the brussels sprouts so soft making them pair with the melty cheese sauce so perfectly is sautéing the sprouts before. This side dish is so luscious and mouth-watering, you won’t believe you are eating veggies!

Ingredients

  • 1 1/2 lbs. brussels sprouts; stems and outer leaves removed and halved (cut into quarters if extra large)
  • 1 Tbsp. butter; divided
  • 1 Tbsp. olive oil
  • 1 shallot; minced
  • 2 cloves garlic; minced
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Creamy Cheese Sauce Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. all-purpose flour
  • 1 cup milk; whole or reduced fat
  • 1/2 cup cream cheese
  • 1 cup Monterey Jack or Gruyere cheese; shredded Plus extra for the topping
  • 1 cup mozzarella cheese; shredded Plus extra for the topping
  • 1/4 cup parmesan cheese; shredded or grated Plus extra for the topping
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper

Instructions

  • Bake for 15-20 minutes until the sides of the casserole turn golden brown and the cheese is bubbly and melty. Enjoy!

Notes

  1. Store any leftovers in an airtight container for up to 3 days in the refrigerator. To reheat microwave for 1-2 minutes until warmed and cheese is melted or reheat in oven at 350 degrees F. 
  2. Add bacon! If you and your family love bacon, add bacon pieces to the casserole. Simply sprinkle as much bacon as you want when you add the Brussels sprouts to the cheese sauce. Add some bacon pieces to the top too before baking!

    I made this Brussel Sprout Casserole today and let me tell you , I will never eat Brussel Sprouts any other way. I added the bacon you suggested and it was so a wonderful addition to this creamy cheesy casserole. This is a keeper for sure!
