If you are wanting a healthy snack with some spice this weekend, you need to make this Corn and Black Bean Salsa recipe! This salsa takes a few minutes to make or you can whip this up the night before. Loaded with protein and veggies so you can snack guilt-free. 

This salsa is packed with fresh vegetables, beans, corn and a hint of sriracha to add spice. You’ll love how light and refreshing this dip is and it’s dressed with a simple oil and vinegar dressing and topped with creamy slices of avocado.

INGREDIENTS

  • Black beans: pinto beans will work great with this recipe too. 
  • Corn: you can use fresh or canned corn kernels. 
  • Green bell pepper: you can use any color such as orange, yellow, or red. 
  • Cherry tomatoes: you could also use diced Roma tomatoes.
  • Cucumber
  • Shallot
  • Garlic
  • Olive oil
  • Balsamic vinegar
  • Parsley
  • Sriracha: add as much or as little as you prefer.
  • Salt + pepper
  • Avocado: you can slice them on top or cube them and mix them with the dip. If you do cube the avocados and add them to the dip, they will turn brown overnight in the dip.
  • Chips to dip: you can also dip with sliced cucumbers, bell peppers or celery sticks for an even healthier alternative. 

HOW TO MAKE BLACK BEAN AND CORN SALSA

  1. Mix together all of the ingredients until combined. Add to a serving dish and serve with chips or use a topping for steak, chicken or pork. 
  2. Optional: place the dip in the refrigerator for 1 hour to over night to let the flavors soak in.

Ingredients

  • 1 15 oz. can of black beans; drained and rinsed
  • 1 11 oz. can of corn; drained and rinsed
  • 1 green bell pepper; diced
  • 1/2 cup cherry tomatoes; cut in quarters
  • 1/2 cup cucumbers; diced with seeds removed
  • 2 Tbsp. shallots; diced
  • 1 tsp. garlic; chopped
  • 3 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. fresh parsley; chopped
  • 1 Tbsp. Sriracha
  • Salt and pepper to taste
  • Avocado to garnish; optional
  • Chips to dip
