  • Potatoes: I find that Yukon Golden potatoes have the best flavor for this recipe, but can use your favorite type of potatoes that have a high starch content like Russet potatoes or sweet potatoes.
  • Butter: Makes these extra velvety and buttery.
  • Milk: Helps thins out the potato mixture to make a smooth consistency. Heavy cream, whole milk or reduced-fat milk work great.
  • Boursin Cheese: The star of the show! Who doesn’t love this cheese? It’s the best. You could find this at just about any grocery store. You can use your favorite Boursin flavor but the Garlic and Fine Herbs flavor is our favorite.

how to make creamy boursin mashed potatoes

Cook potatoes: Add potatoes and garlic cloves to a large pot and fill with water just until the water touches the tops of the cubed potatoes. Add a teaspoon of salt. Bring to a boil and cook until potatoes are tender, about 5-10 minutes.

Mash potatoes: Drain the potatoes then add them back to the large pot. Add the butter, heavy cream or milk, parmesan cheese, Boursin cheese, salt and pepper. Mash and stir until potato mixture is smooth with a potato masher or electric hand mixer.

Serve and enjoy: Transfer potatoes to a serving bowl and garnish with fresh chives or green onions (optional). Enjoy!
