Mashed Potatoes with Boursin Cheese

- 3 pounds Yukon Gold Potatoes peeled and cut into cubes
- 1/2 cup salted butter cut into cubes or slices
- 1/2 cup heavy cream or milk
- 1/4 cup grated parmesan cheese
- 1 5.2 ounce package Boursin cheese
- 3 cloves garlic peeled and roughly chopped
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Add potatoes and garlic cloves to a large pot and fill with water just until the water touches the tops of the cubed potatoes. Add a teaspoon of salt. Bring to a boil and cook until potatoes are tender, about 5-10 minutes.
Drain the potatoes then add them back to the large pot. Add the butter, heavy cream or milk, parmesan cheese, Boursin cheese, salt and pepper. Mash and stir until potato mixture is smooth with a potato masher or electric mixer.
Transfer potatoes to a serving bowl and garnish with chives or green onions (optional). Enjoy!
