These healthy Pumpkin Energy Bites are filled with sweet and smooth flavors of pumpkin, honey, and creamy peanut butter. Full of protein and so easy to make, these pumpkin protein bites are great for whenever you’re craving fall flavors or in need of a quick but filling snack!

Peanut butter energy bites are great for whenever you are wanting to keep the hunger at bay! This pumpkin energy bites recipe is made with the best combination of fall spices such as nutmeg and cinnamon which makes this perfect for whenever you are craving those sweet pumpkin flavors! 

Old-fashioned rolled oats and your choice of chocolate chips (completely optional) mixed with nutty peanut butter create energy bites that are full of protein and flavors that are rich in crunchy chocolate! I use my Oatmeal Peanut Butter Energy Bites recipe as a base for a lot of my protein bite recipes and add whatever ingredient seems fitting and delicious. 

No-bake energy bites are great for meal prep and whenever you need to have breakfast or snacks covered for the week. I usually always have some type of variation of protein balls in my refrigerator! They’re just so delicious and a great way to squeeze in a healthy and filling snack.

If you are craving flavors of fall, then you will LOVE this energy bites recipe. I definitely do. Other seasonal recipes of mine include Healthy Pumpkin Oat Muffins, Pumpkin Pie Bars, and my super moist Pumpkin Muffins. Pick your favorite!

INGREDIENTS FOR PUMPKIN ENERGY BITES RECIPE

Honey: Use your favorite honey for this recipe. I like to use local honey! 

Peanut Butter: You will want to make sure the peanut butter is creamy but firm enough to form into energy bites. Make sure the peanut butter is not too oil-based. 

Vanilla: Rich vanilla extract gives this pumpkin energy bites recipe a hint of vanilla you will love!

Pumpkin Purèe: Use either fresh or canned pumpkin purée. Whichever is easiest! Remember that pumpkin purée is different than pumpkin pie filling.

Pumpkin Pie Spice: Make your own pumpkin pie spice with ground nutmeg, allspice, cloves, ginger, and cinnamon or use your favorite store-bought blend.

Oats: I like to use old-fashioned rolled oats because they are easy to work with, in my opinion. I am not sure how other types of oats will work for this recipe. 

Chocolate Chips: Use either dark or white chocolate chips for your favorite addition of rich chocolate flavors. Both options are great! In this recipe, I used white chocolate chips.

HOW TO MAKE THESE PUMPKIN ENERGY BALLS

STEP ONE: In a large bowl, whisk together the honey, peanut butter, and vanilla extract until combined.

STEP TWO: Next, add the pumpkin purée and pumpkin pie spice and stir until the mixture thickens. Fold in the oats until all of the ingredients are completely combined. Next, mix in the chocolate chips if you are using them.

Place the energy bites mixture in the refrigerator to chill for at least 20 minutes. 

STEP THREE: Use a mini ice cream scoop or your hands to roll our 14 energy bites. Place the bites in the refrigerator until ready to eat.

TIPS

  • For a vegan version, use maple syrup instead of honey. 
  • For a chocolate-free version, leave the chocolate chips out. 
  • Add chia seeds or flax meal for extra fiber and protein. 
  • If the oat mixture is too sticky, try adding more oats. 
  • Add coconut flakes or chopped nuts for extra flavors and textures.

WHY ARE THEY CALLED ENERGY BITES? 

Energy bites were their name because they are filled with ingredients that give you energy such as fats, protein, and carbs. These energy bites are great for whenever you are needing a quick pick-me-up! 

WHAT DO PUMPKIN ENERGY BALLS TASTE LIKE? 

These energy bites taste like tiny versions of pumpkin pie, but with peanut butter! Energy bites are slightly sweet and nutty.

STORING LEFTOVERS

Store the leftovers in an airtight container in the refrigerator for up to two weeks.

To freeze these pumpkin bites, then place them in a freezer-safe container or bag and freeze them for up to three months.

When ready to enjoy these pumpkin energy bites, allow them to defrost overnight in the refrigerator before eating. You will love them! 

These energy bites are great to keep around for whenever you are needing breakfast or a post-afternoon snack. This is one of my very favorite autumn recipes!

Ingredients

  • ¼ cup honey; slightly melted

    I had all the ingredients and made this recipe this morning. Oh my, it’s so delicious! I can’t wait for hubby to come home from work so he can taste all the deliciousness!

  2. I’m allergic to pumpkin but I used gloves and made these for my daughter who is vegan. She thought they were great! Do you think these would be okay using apple butter or sauce? Apples and peanut butter are so delicious!
