One of my favorite desserts, especially during the summer is a classic Fruit Tart! The kind made with a buttery crust, vanilla custard center, and colorful fruit on top. These Fruit Pizza Cookies tastes just like that except they are made in a smaller form and take a fraction of the time.
The secret ingredient that makes these Mini Fruit Pizzas stand out from the others out there is I use Vanilla Pudding Mix in both the sugar cookie dough and the frosting. The pudding mix makes the sugar cookies have a sweeter vanilla flavor and it makes the frosting tastes like a combination of custard and sweet cream cheese frosting.
These Mini Fruit Pizza Cookies are loaded with texture. From the thick and chewy sugar cookie crust, to the tangy cream cheese frosting, and crisp fresh fruit. YUMMM!
Other cookies that are made with pudding mix are Chocolate Chip Pudding Cookies, Birthday Cake Cookies, Cheesecake Cookies, and Sprinkle Cookies.
Key Ingredients
- Sugar Cookies: the sugar cookies in this recipe are thick, chewy, and hold the perfect shape for the pudding frosting. Alternatively you can use my Soft Sugar Cookie Recipe or my Cut-Out Sugar Cookie Recipe as well.
- Pudding Frosting: made with pudding mix, butter, cream cheese, and powdered sugar. The pudding mix gives these cookies the ultimate fruit tart flavor.
- Fresh Fruit: use any of your favorite fruits! I love using fresh blueberries, raspberries, kiwi, clementines or mandarin oranges, and strawberries. They add SO much color to the cookies too!
How To Make Fruit Pizza Cookies
Beat butter: In a large bowl cream softened butter and sugar together with a hand held electric mixer or stand mixer until light and fluffy, about 2-3 minutes.
Add eggs and extracts: Add in eggs and vanilla extract, almond extract, and continue to mix together until smooth. Be sure to scrape down the sides of the bowl often.
Add dry ingredients: Add in flour, baking powder, and pudding mix. Continue to beat together just until the cookie dough forms (the dough might be crumbly and thats ok, if you squeeze it together with your hands it will stick together). Cover with plastic wrap and let the cookie dough sit in the refrigerator for 10 minutes.
Scoop, roll, and press: Scoop 3 tablespoons of cookie dough (the size of a large cookie scoop). Roll the dough into a ball and place on cookie sheet lined with parchment paper. Gently press the bottom of a spice jar on top to spread making a slight indent in the cookies.
Bake: Bake for 9-11 minutes or just until a light golden brown. Remove from the oven and let cool for a few minutes before transferring the cookies to a cooling rack.
How To Frost & Assemble Fruit Pizza Cookies
To Frost: Add all of the frosting ingredients to a mixing bowl and beat together with an electric mixer until smooth and combined. Scrape down the sides of the bowl and beat again.
To Assemble: Generously spread frosting on cooled cookies and top with pieces of fruit. It’s best if the fruit is cut into small pieces so they can fit on the cookie. Serve immediately or place cookies in the refrigerator to chill. These cookies are delicious at room temperature and chilled. Enjoy!

Recipe Variations & Add-Inns
Switch the frosting: Other frosting ideas you can use instead are Nutella, vanilla or buttercream frosting, chocolate frosting, vanilla custard, cool whip, or whipped cream make great alternatives.
Use different fruit: You can customize these cookies by using your favorite fruit. These are some of my favorite fruit toppings: strawberries, blueberries, raspberries, kiwi, mandarines, apples, bananas, grapes, mangoes, pineapple, peaches, nectarines.
Add a glaze: If you really want these cookies to resemble a fruit tart even more, I suggest adding a light glaze over the fruit. Heat a little jam of your choice (I recommend using apricot), add a little water to thin, and brush on top of fruit.
Pat fruit dry: You want to make sure you wash your fruit and pat the fruit dry with a paper towel as much as possible. You don’t want to get an excess water on top of the frosting otherwise it can change the consistency. Fresh fruit is always best since it won’t retain as much liquid.
Lemon Frosting: Instead of using vanilla pudding, use lemon pudding mix and add a teaspoon of fresh lemon juice and lemon zest.
Best Fruit To Use
You can use any of your favorite fruits for this recipe. For best results, I recommend using fresh fruits such as:
- Bananas
- Blueberries
- Raspberries
- Blackberries
- Peaches or Nectarines
- Strawberries
- Kiwis
- Grapes
- Mango
- Oranges
- Pineapple
- Mandarins
- Plums
Leftovers & Storage
To Store: Place cookies in an airtight container and be sure to add a layer of wax paper in between the layers. They will last in the fridge for up to 3 days. Please note that depending on the fruit you use, the fruit may turn brown.
To Freeze: I do not recommend freezing frosted cookies with fruit on top because the fruit won’t stay fresh and will brown.
However, you can bake the sugar cookies well in advance and freeze them for up to 3 months. When ready to assemble cookies, all you have to do is make the frosting and top with fruit.
Make-Ahead: If you want to make these cookies entirely in advance, be sure to use fruit that won’t brown such as fresh berries, oranges, and grapes. You can make these up to 2 days in advance.

Fruit Pizza Cookies
Ingredients
To Make The Cookie
- 3/4 cup butter softened
- 3/4 cup granulated sugar

- 1/4 cup cream cheese softened
- 1/4 cup unsalted butter softened
- 1/4 cup vanilla pudding powder
- 1/4 cup milk to thin
- 1/4 cup powdered sugar
- fresh fruit I use blueberries, raspberries, strawberries, kiwi, clementines
Instructions
To Make The Cookies
- In a large mixing bowl beat butter and sugar together with a hand held electric mixer or stand mixer until light and fluffy, about 2-3 minutes.
