This Cilantro Lime Chicken with Avocado Salsa is so bright, flavorful and packed with fresh flavors. It takes minutes to make the marinade with a few fresh ingredients such as fresh lime juice, cilantro, garlic, honey, and spices.

This mouthwatering chicken will be your new go-to recipe! I used Foster Farms Simply Raised Air Chilled thin-sliced chicken fillets and they grill up perfectly and quickly! The grilled chicken gets topped with a vibrant avocado salsa. Summer time is the best time to bust out your indoor or outdoor grills to make this recipe!

CILANTRO LIME CHICKEN 

This cilantro lime marinade can be marinated anywhere from 30 minutes to 3 hours depending on how much time you have. I love using Foster Farms Simply Raised Air Chilled Chicken because it always makes my chicken so tender, juicy, and easy to grill!

The avocado salsa makes this recipe complete! Similar to a pico de Gallo , only with avocado and less tomatoes- it’s pure perfection and you can also double the recipe and serve the rest as a dip with tortilla chips!

HOW TO MAKE AVOCADO SALSA

Add the avocado, tomato, red onion, lime juice and garlic powder in a medium bowl. Add salt and pepper to taste and stir together. Top the avocado salsa on top of the grilled Cilantro Lime Chicken.

This Cilantro Lime Chicken is perfect on any grill. I used my indoor grill and the chicken came out perfectly cooked with beautiful grill marks.  This dish can be served as lunch, dinner, during a summer BBQ, or any day of the week! You can top the chicken on a green salad, fresh steamed veggies or just as it is.

This is a complete summer meal when accompanied with tortilla chips, salsa, guacamole and a corn salad!

TIPS FOR MAKING THE BEST CILANTRO LIME CHICKEN

  • The longer you let the chicken marinate, the more flavor it will have.
  • For additional flavor, simmer the left over cilantro lime marinade in the grill pan after the chicken has cooked and it can be served on top of the chicken. The marinade will thicken after a few minutes.
  • If using chicken breasts, slice them in half or pound them so they are tender and have a quicker grill time.
  • Any chicken will work for this recipe- the time will defer depending on the type of chicken used.

INGREDIENTS TO MAKE CILANTRO LIME CHICKEN

  • Limes
  • Oil
  • Cilantro
  • Foster Farms Simply Raised Air Chilled thin-sliced Chicken Fillets
  • Honey
  • Garlic
  • Salt + pepper

  • Avocado
  • Roma tomato
  • Red onion
  • Garlic powder
  • Lime juice
  • Salt + pepper

HOW TO MARINATE CILANTRO LIME CHICKEN 

  1. In a medium bowl, whisk together the lime juice, lime zest, oil, cilantro, honey, garlic, salt, and pepper.
  2. Add the chicken to the marinade and massage for a minute with your hands. Add the chicken and the marinade to a large ziplock bag and place in the refrigerator for 30 minutes to 3 hours.
  3. When ready to grill, remove the chicken from the refrigerator and heat a grill on medium high heat if using an indoor grill. Lightly coat the grill with olive oil and grill the chicken on each side for 7-8 minutes. When the chicken is ready, the internal temperature will be 165 degrees Fahrenheit. Make the avocado salsa and spoon onto tops of the grilled chicken.

Ingredients

Cilantro Lime Marinade

  • 1.5 pounds Foster Farms Simply Raised Air Chilled Chicken; thin sliced breast fillets; about 4 or 5
  • 4 whole limes; plus the zest of 2 whole limes
  • 1/4 cup oil
  • 1/3 cup cilantro; packed and chopped
  • 1 Tbsp. honey, melted
  • 1 Tbsp. garlic; minced
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Avocado Salsa

  • 1 large avocado or 2 small; cubed
  • 1 roma tomato; seeds removed and diced
  • 1/4 cup red onion; diced
  • 1 tsp. fresh lime juice
  • 1/4 tsp. garlic powder
  • salt and pepper to taste
  • 1- 1/2 jalapeno; finley minced (optional for spice)

Instructions

To make Cilantro Lime Chicken
