I love this healthy breakfast treat (made with only 7 ingredients) because it’s healthy and packed with my favorite flavors of vanilla, maple syrup, coconut, and honey. Crunchy pieces of mixed nuts and quinoa make this granola extra crunchy! My favorite way to enjoy this granola is in a yogurt parfait with vanilla Greek yogurt, sliced banana, blueberries, and apricot butter.

You can indulge in this with milk and enjoy it as cereal or simply enjoy it as a snack to munch on just how it is. This granola naturally sweet it will curb any sweet tooth!

I love making my granola from scratch because I know exactly what’s going in it. Have you read the ingredients on a bag of granola from the store? It’s scary and I can’t even pronounce half of the ingredients listed on there. Granola is a treat to me because I enjoy it so much and using whole natural ingredients makes this recipe even better. I focused on making this granola more on the crunchier side then clumpy side and it has just the right amount of crunch to it.

Granola is one of those treats you can’t ever get tired of because you can enjoy it in so many different way. You can also switch up the flavors like I did with this Peanut Butter Chocolate Granola and this Pumpkin Spice Granola. I even made Frozen Yogurt Granola Cups with this Vanilla Nut Granola and it’s perfect when I’m craving ice cream or something sweet.

INGREDIENTS NEEDED TO MAKE VANILA NUT GRANOLA

  • Old -fashioned rolled oats
  • Mixed nuts
  • Honey
  • Syrup
  • Vanilla extract
  • Coconut oil
  • Quinoa

HOW TO MAKE VANILLA NUT GRANOLA

  1. Preheat oven to 300 degrees F and line a baking sheet with parchment paper or a silcone mat. Toss the oats and mixed nuts in a large bowl together and set aside.
  2. In a small bowl, whisk together the honey, syrup, vanilla extract and coconut oil. Pour the mixture over the oats and mix to evenly coat and until the oats are moistened.
  3. Spread the granola on the prepared baking sheet and sprinkle the quinoa on top. Bake for 40 minutes, flipping half way through cooking. Let the granola cool completely- this will make the granola extra crunchy! Enjoy!

  • 1 1/2 Tbsp. vanilla extract
  • 1/4 cup coconut oil; melted
  • 1/4 cup quinoa

Notes

  1. This granola can stay fresh for an extra long time- up to 3 weeks when stored in an airtight container in a cooled area.

    I love that this has no refined sugar! I love granola for breakfast and this definitely sounds like one to try!
