Sheet Pan Chicken and Veggies

SHEET PAN CHICKEN AND VEGGIES

This recipe is a staple and so easy to make. Juicy chicken breasts are seasoned and baked with fresh broccoli and zucchini. I lightly coated the veggies in olive oil, salt, pepper, oregano and garlic. Once everything was cooked I top the chicken with fresh lemon wedges to add fresh flavor.

Chicken is always a great idea for dinner! Some other favorite chicken dinners that we love and make often are 20 Minute Chicken Teriyaki Bowls, Skillet Chicken Pot Pie with Biscuits, Chicken Zoodle Soup, and Crockpot Rosemary Lemon Whole Chicken.

The best part about this one pan chicken and veggies is it requires minimal effort and time in the kitchen! Another perk- there is minimal cleanup too!

You can use your favorite veggies or add more to the sheet pan. Some other vegetable options to use are sweet potatoes, baby red potatoes, carrots, brussels sprouts, asparagus, green beans and onions. Use whatever veggies in your in the mood for, they will all work deliciously!

INGREDIENTS NEEDED TO MAKE SHEET PAN CHICKEN AND VEGGIES

  • Chicken breast
  • Zucchini
  • Broccoli
  • Olive oil
  • Garlic
  • Oregano
  • Salt + pepper

HOW TO MAKE SHEET PAN CHICKEN AND VEGGIES

  • Preheat oven to 425 degrees F. In a small bowl whisk together olive oil, garlic, salt, pepper, and oregano.
  • In a medium bowl mix together one tablespoon of the seasoned olive oil mixture with the broccoli. Mix to coat and place the broccoli on one side of the baking sheet. Using the same bowl, mix together the zucchini with another tablespoon of the olive oil mixutre. Mix to coat and place on the other side of the baking sheet.
  • Brush the remainder of the olive oil on both sides of each chicken breast and place in the center of the baking sheet. Bake for 20-25 minutes until the chicken is all the way cooked through.

MEAL PREP

This recipe is great for meal preps! If you want to meal prep your lunches for the week, this is perfect and healthy. You could also add this chicken to a salad– just slice or cube and it would go with just about any salad. This will last in the fridge for up to 5 days.

Ingredients

  • 1.5 lbs. thinly sliced chicken breasts- about 4

Notes

  1. This recipe is great for meal preps! If you want to meal prep your lunches for the week, this is perfect and healthy.
  2. You could add this chicken to just about any salad– just slice or cube it.
  3. Make sure the internal temperature of the chicken is 165 degrees F. The cooking time may vary depending on the thickness of your chicken. Please note- I use thinly sliced chicken breasts for this recipe.

    Oh my goodness – so very simple and nutritious! And REALLY easy cleanup, too – hurray! Thanks for the great suggestions for other veggies to try. I’m already visualizing other pairings … maybe asparagus and baby potatoes. Yum! Oh – and great idea to prep this chicken to use in salads, too – haven’t tried that yet, but it’s a super idea!

    Hands down the fastest/easiest way to get dinner on. I used parchment paper on the baking tray so all I had to do after was wash the cutting board and throw away the paper. So simple!

    Sheet pan meals like this are so useful for busy weeknights. I do like to toss some cubed sweet potatoes in most of my sheet pan meals but I have fresh zucchini right now so I’ll do a combo of both.
