Is anyone else a fan of quick and easy snacks that are filled with protein? These Peanut Butter Oatmeal Cookie Bliss Bites make a quick breakfast or snack for any time of the day!

I feel like I have so much to say about these bites. I’m so excited about how they turned out. They have ZERO added sugar and these will instantly give you an energy boost. These bites come in handy around 3pm when you need a sweet snack and want to fall asleep at your desk.

I typically buy protein packed bars for the work week. A few of my favorites are KIND Bars, Rx Bars, and Perfect Bar’s and I usually have half of the bar for a mid-morning snack to hold me over until lunch. These bliss bites are perfectly sized and I don’t have to feel obligated to eating a whole bar.

Ingredients for Peanut Butter Oatmeal Bites

Use as much honey as you need. If your mixture seems a little dry, I would add more. The honey is like the glue to this recipe.

It’s almost too good to be true but I promise they are healthy! They are loaded with protein, potassium, collagen, and fiber. And the best part is it’s naturally sweet.

Ingredients

  • 3/4 cup Rolled Oats
  • 5 whole dates; pitted
  • 3 Tbsp. honey
  • 1/2 tsp. vanilla extract
  • 1/4 cup creamy peanut butter; I used natural
  • 1/4 cup oat flour
  • 1 Tbsp. collegan; flavorless

Instructions

  • In a food processor combine all of the ingredients until well combined, pulse for about 3-5 minutes.
  • With an ice cream scoop or your hands, roll the dough into bites. Place in fridge until ready to eat!

Notes

These will last up to 2 weeks in the fridge when placed in an airtight container or covered with plastic wrap.
