These are the best Chewy Ginger Molasses Cookies you can make for the holidays! Similar to a gingersnap and gingerbread except these cookies are extremely chewy and spiced just right! 

Rolled in a cinnamon sugar mixture before getting baked to give these cookies even more holiday cheer!

This easy recipe requires no chilling or any fancy ingredients.  You can make these in less than an hour if you are needing a quick last minute holiday cookie recipe. The holidays just aren’t complete without these perfect softy and chewy cookies!

With only a few simple steps, these cookies couldn’t get any easier! 

These cookies are one of the first cookies I bake around the holidays because they are incredibly easy to make, require very minimal time and effort, and delicious! Gingerbread is one of my favorite holiday flavors so of course I have to bake my Gingerbread Cookie Bars and Baked Gingerbread Oatmeal Bites too!

INGREDIENTS

  • Butter
  • Brown sugar
  • Molasses 
  • Egg
  • All-purpose flour
  • Baking soda
  • Ground cinnamon
  • Nutmeg
  • Ginger
  • Sugar

HOW TO MAKE CHEWY GINGER MOLASSES COOKIES

  1. Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper or silpat mats. Set aside.
  2. In a large mixing bowl, beat butter and brown sugar with an electric mixer on medium-speed until light and fluffy. Be sure to scrape down the sides of the bowl.
  3. Add in molasses, egg and vanilla extract and beat on low-speed until combined.
  4. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger and salt to combine. Gradually add the flour mixture to the wet mixture until a cookie dough starts to form. Occasional scrape down the sides of the bowl.
  5. Place the sugar and cinnamon in a shallow bowl and mix together with a spoon. Scoop the cookie dough with a mini ice cream scoop or 2 tablespoons of dough and roll to form a ball. Roll each dough ball in the cinnamon sugar mixture and place on the prepared baking sheets leaving about 2 inches apart and lightly press down on each cookie.
  6. Bake for 9-10 minutes.

The brown sugar in these cookies makes them even chewier because the brown sugar has molasses in it- making the cookies extra moist.

  • Drizzle the tops of these cookies with a light frosting or icing! You could also coat the top of the cookie if you want more icing.

Ingredients

  • 3/4 cup butter; unsalted
  • 1 cup brown sugar; room temperature
  • 1/4 cup molasses
  • 1 whole egg
  • 2 tsp. vanilla extract
  • 2 1/4 cup all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 2 tsp. ground ginger
  • 1/4 tsp. salt

Cinnamon Sugar to roll cookies

  • 3 Tbsp. granulated or coarse sugar
  • 1/2 tsp. ground cinnamon

    It is not the holidays unless molasses cookies are made and these are some of the best cookies I have ever made. They are tender , chewy and full of that Christmas spice . These are now my all time favorite cookies.
