I’m always a fan of the easiest and nutrient packed meals, especially being a busy momma of 2 little ones. These Ground Turkey Enchiladas are perfect and are a family favorite. They are loaded with flavor and are so cheesy since we add shredded cheese in and out of the tortillas. YUM!
Seasoned ground turkey meat and cheese gets rolled up in soft flour tortillas and smothered in a creamy enchilada sauce and topped with more cheese. These are the best ground turkey enchiladas and are so satisfying. Sometimes we swap the ground turkey for ground beef since this recipe is customizable.

key ingredients
- Flour tortillas: Large “taco size”, 8 inch tortillas are the perfect size. You can make these with yellow corn tortillas or white corn tortillas if you prefer. If you do, you will be able to make more enchiladas since the corn tortillas are about half the size of a regular flour tortilla.
- Ground turkey: The star ingredient! I love using the 93/7 turkey meat so it doesn’t get dry, but you can also use extra lean ground turkey meat if you prefer.
- Shredded cheese: My favorite cheeses to use when making enchiladas is a Mexican cheese blend that consists of sharp cheddar cheese and Monterey Jack cheese. However, any cheese combination will work. Other options are white cheddar cheese, pepper jack and colby jack.
- Sour cream: You can use regular or low-fat.
- Red enchilada sauce: Canned enchilada sauce works perfectly- use your favorite store-bought brand or make your own enchilada sauce from scratch. I’ve never tried this recipe with green sauce, but I’m sure it would be just as good! I love red enchilada sauce with this recipe because it compliments the sour cream so well.
- Yellow onion: You can also use white onion.
- Seasonings: We use a combination of garlic powder, onion powder, chili powder, cumin, salt and pepper. Alternatively you can use a taco seasoning since they have similar ingredients.
- Toppings of your choice: Guacamole, pico de Gallo, jalapeños, tomatoes, diced onions, green chiles, fresh cilantro, and spicy salsa are some of our favorites. Add your favorite hot sauce if you want more heat.
how to make ground turkey enchiladas
Sauté onions and pepper: Preheat oven to 350 degrees F. In a large frying pan or large skillet on medium heat, add olive oil and sauté onion, garlic, and peppers for 3-5 minutes, or until peppers are softened.
Cook turkey meat: Add ground turkey meat, 2 tablespoons of enchilada sauce, and seasonings. Cook until ground turkey is completely cooked through and no longer pink, about 7-10 minutes.
Mix enchilada sauce and sour cream together: In a medium bowl, whisk together enchilada sauce and sour cream. Ladle 1 cup of enchilada sauce onto the bottom of a 9×13 inch baking dish or casserole dish.
Mix cheeses together: In a small mixing bowl combine the shredded cheeses.
Assemble enchiladas: Add 1/2 cup of cooked turkey mixture in the middle of each tortilla and top with 1/4 cup of cheese. Roll the tortilla and place on baking dish covered in enchilada sauce. Repeat until you’ve made 8 enchiladas.
Bake and add toppings: Top with remaining enchilada sauce and remaining cheese. Cover with foil and bake for 15 minutes, then remove the foil and bake for 5 more minutes until cheese is bubbly. Top with your favorite toppings such as sliced avocados, fresh cilantro, sour cream, and pico de gallo. Enjoy!
CAN I MAKE ENCHILADAS AHEAD OF TIME?
You can make these Ground Turkey Enchiladas in the morning or the night before. Be sure to wrap the baking dish with plastic wrap and leave it in the fridge until ready to bake.
When ready, bake accordingly to the directions and you may need to add a few additional minutes.
CAN I FREEZE ENCHILADAS?
If you love freezer meals, these enchiladas freeze great. Place enchiladas in a freezer-safe pan and cover tightly with plastic wrap and then cover with foil. You can keep these frozen for up to 2 months.
Once ready to enjoy, thaw the enchiladas overnight in the refrigerator before baking. Bake accordingly to the directions.

- Turkey: If you’re not a fan of ground turkey, you can also use lean ground beef or ground chicken instead.
- Healthier option: Use whole wheat flour tortillas instead of regular flour tortillas.
- Low carb option: Use low-carb tortilla instead of regular flour tortillas.
- Shred your own cheese: I always recommend shredding the cheese yourself instead of buying pre-shredded so the cheese gets extra melty.
- Green sauce: Use green enchilada sauce instead of red sauce if you prefer.
- Vegetarian enchiladas: Swap the ground turkey for black beans and, or your favorite roasted veggies.
- Make a double batch: This is a great idea so you can freeze one batch for a meal prep. You’ll be so glad you have these handy in your freezer.
- Topping ideas: Guacamole, sliced avocados, sour cream, pico de gallo, sliced jalapeños, diced red onion, thin sliced green onions, cilantro, and queso fresco.
What to serve with ground turkey enchiladas?
These enchiladas are hearty since they are filled with ground turkey meat so I love serving them with Corn and Bean salad and chips and guac.
Some other great Mexican food inspired additions are my Shrimp Ceviche, Sheet Pan Nachos, Tostadas, Taco Pasta Salad, and Baked Chicken Taquitos.
leftovers & storage
If you have leftovers, they are just as delicious the next day. Simply wrap them tightly with plastic wrap or an airtight container and place in the refrigerator for 3-4 days. When ready to reheat, bake at 350 degrees F for about 10-15 minutes until warm and cheese has remelted.

Ingredients
- 1/2 tablespoon olive oil
- 1 medium yellow onion diced

- 1/8 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 cup sour cream
- 1 1/4 cup shredded sharp cheddar cheese divided
- 1 1/4 cup shredded Jack cheese divided
- 8 large flour tortillas
Instructions
