  • Peanut butter
  • Eggs

HOW TO MAKE HEALTHY PEANUT BUTTER COOKIES

  1. Preheat oven to 350 degrees F and line 2 cookie sheets with a silpat mat or parchment paper. In a large mixing bowl mix together peanut butter, egg, oat flour and maple syrup until incorporated.
  2. Using a medium cookie scoop or scoop 2 tablespoons of cookie dough on the baking sheet about 2 inches apart. Gently press down on the cookie dough ball with your fingers or use a fork. Add a few chocolate chips to the top of each cookie and bake for 14-15 minutes until set.
  3. Let the cookies cool for a few minutes and enjoy!

TIPS

  • You can make these peanut butter cookies with or without chocolate! If you want to add more chocolate to these cookies, add more chocolate chips to the cookie batter and top them with more chocolate chips.
  • If you don’t have oat flour, you can make them yourself by grinding rolled oats in a food processor.
  • I love to undertake these cookies by a few minutes (bake for 12 minutes) so the center is extra soft.

I ground my own oats for the flour and found that extra step to be super simple. I also added sugar free chocolate chips. Simple and delicious. This recipe is a keeper!

Do these use regular peanut butter or natural? I’m guessing natural since you say that cookies have no processed sugar but I want to make sure. Thanks! 🙂

I used natural peanut butter but you could definitely use regular as well- it will increase the sugar but will work perfectly! I hope you love them!
