I just love making festive treats during the holidays! This Peeps Cake couldn’t be easier to make- especially since we use boxed Funfetti cake mix, canned frosting, Easter candy, green coconut, and of course..marshmallow Peeps.
You can decorate this cake any way you want and use your favorite Easter candy. There are so many different variations you could use so use your families favorites. This cake will quickly become one of everyones favorite recipes and you’ll be making this on repeat every year.
You’ll love that once the cake is baked, it takes minutes to assemble this adorable Peeps cake so you don’t need a ton of time to make an Easter cake.

key ingredients
- Boxed cake mix (plus the ingredients the box instructions calls for): Funfetti, white or vanilla cake mix is my favorite to use but you can use any of your favorites such as chocolate, carrot cake, strawberry, or bake your own cake from scratch using your favorite recipe.
- Frosting: We use canned frosting to make it easy but you can make your own from scratch. Make sure the frosting is softened at room temperature so it’s easy to spread onto the cake.
- Shredded coconut: Used to make the edible grass.
- Green gel food coloring: Green food gel is used to dye the coconut green for the grass. If you’re not a fan of coconut, use green icing instead.
- Peeps: We use both Marshmallow Bunny Peeps and Marshmallow Chicks Peeps. You can find Peeps marshmallows at all grocery stores after Valentine’s Day through Easter.
- Easter chocolate eggs: I used Reese’s Pieces Eggs but you can also use jelly beans, Robin Eggs, Cadbury Mini Eggs, Easter M&Ms, and Hershey’s Eggs.

Bake cake: Bake cake according to box directions, using two greased 8×8 inch or 9×9 inch cake rounds. Let the cakes cool for a few minutes before transferring to a cooling rack to cool completely.
Frost cake: Line a cake platter or serving dish with parchment paper and and place one of the cake rounds in the center. With a butter knife or offset spatula, frost bottom layer of the cake with frosting and then place the top layer. Cover with frosting. It’s ok if you don’t cover all of the sides of cake perfectly because the Peeps will cover the sides and the coconut will cover the top.
Add peeps: Add Peeps around the sides of the cake and make sure the backs stick to the frosting.
Make coconut grass: To make the green grass, place the shredded coconut in a large ziploc bag and add a few drops of green food coloring. Shake the bag until the coconut is green. Sprinkle on top of cake, leaving some room around the edges.
Add cake toppings: Add chocolate Easter eggs and Peeps chicks on top. Carefully remove the parchment paper from the bottom of the cake and enjoy!
variations
- Cake flavor: I used funfetti cake mix but you can use your favorite cake flavor or bake your own from scratch. Betty Crocker, Duncan Hines, and Pillsbury are all great options. The flavor and color of the cake will mostly be covered by the frosting and Peeps so you can use any.
- Frosting flavor: Canned or homemade white frosting, vanilla frosting, cream cheese frosting, chocolate frosting, or buttercream frosting make great options.
- Other Easter candies to use: Pastel colored M&Ms, sprinkles, frosting gel, Robin Easter eggs, and chocolate eggs are all perfect candies to decorate this cake. You can even add a chocolate bunny to the the top of the cake if you want too.
- Gluten-free cake: Swap the regular cake mix for gluten-free cake mix. Typically store-bought frosting, Easter candy and Peeps marshmallows are all gluten-free.
tips
- Chill or freeze baked cakes: Chilling the cake will help to temporarily harden the cake, making it easier to frost and prevent cake crumbs.
- Color cake batter: If you want to make this cake extra colorful, use white or vanilla cake mix and add 1 or 2 different food coloring gels. You can swirl the different colors together or color each cake separately.
- Make-ahead: Bake the cake the day before (I usually do this). Wrap cooled cake layers individually with plastic wrap, then place in a large ziplock freezer bag. Place in the refrigerator until ready to frost and assemble. You can bake the cake up to 2 days ahead.
- Adding Peeps bunnies: Be sure to insert bunnies onto the sides of the cake relatively quickly, otherwise the frosting will start to dry.
leftovers & storage
Leftovers: Store leftover cake in an airtight container or cover cake platter with foil or plastic wrap. Store in a cool area for 2-3 days, then transfer to the refrigerator and store for 2 more days. The cake will start to dry out once it’s stored in the refrigerator.
Freeze: You can freeze unfrosted and undecorated cake by wrapping each cake round with plastic wrap and then place in a heavy-duty ziplock bag. Freeze for up to 3 months. To freeze frosted cakes, place the cake in the freezer and freeze for at least an hour until the whole cake is frozen. Cover with plastic wrap or place the frozen cake on a large serving platter.
Defrost: To defrost the unfrosted cake, let the cake thaw completely before frosting by placing the cake in the refrigerator to sit overnight. Defrost the frosted cake by letting the cake sit out in the counter for at least 3 hours or you can defrost it overnight in the refrigerator. Decorate and add the coconut grass.
