Cosmic Brownie Cookies

These jumbo Cosmic Brownie Cookies taste just like the classic Little Debbie cosmic brownies childhood treat but are even better! Made with chocolate cake mix, chocolate chips, then topped with a chocolate ganache, and iconic rainbow chip sprinkles!

Ingredients

Cookies

  • 1 box chocolate cake mix I use Betty Crocker's Chocolate Fudge
  • 1/2 cup salted or unsalted butter melted and slightly cooled
  • 1 whole large egg
  • 1 egg yolk
  • 1 teaspoon pure vanilla extract
  • 1 cup semi-sweet or dark chocolate chocolate chips
  • rainbow chip sprinkles

Ganache Frosting

  • 2/3 cup milk
  • 1 1/2 tablespoons salted or unsalted butter
  • 2 cups semi-sweet chocolate chips

Instructions

  • In a large mixing bowl with an electric mixer or a wooden spoon. Mix all of the cookie ingredients together except for the sprinkles. Be sure to scrape down the sides of the bowl with a spatula. The dough will come together quickly.
  • Using a large cookie scoop (equivalent to 1/4 cup), scoop into giant cookie dough balls, you should get about 10 dough balls. Place on a cookie sheet or plate and place in the refrigerator to chill for 15 minutes.
  • Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper. Place about 5 cookie dough balls on each baking sheet. They will spread!
  • Bake cookies for 14-15 minutes or just until the edges looks crispy and the tops should be set and crackly. Remove from oven and let cool for a few minutes before transferring to a cooling rack.
  • To make the ganache, add milk and butter to a microwave-safe cup or bowl. Microwave until milk is warm and butter is melted, about 1- 1 1/2 minutes.
  • Add chocolate chips to the warmed milk and let sit for a few minutes to melt. Stir until chocolate chips are completely melted and smooth.
  • Once the cookies are slightly cool, spread 1-2 tablespoons of the chocolate ganache frosting, then top with rainbow sprinkles. Let the chocolate set to harden. You can place the cookies in the refrigerator to help the frosting harden. Enjoy!
