Why You’ll Love This Recipe
key ingredients
- Cupcakes: You can use your favorite cupcake recipe whether it’s from a box or you make your own from scratch. I used a box mix of white cake mix but you could also use a vanilla cake mix box. You’ll also need the cupcake ingredients that are listed on the box (usually large eggs, vegetable oil, and water).
- Frosting: I used canned white or vanilla frosting but you can use homemade frosting. Other flavors are vanilla buttercream frosting, cream cheese frosting, or Swiss meringue frosting. If you didn’t want to use frosting, you could also use Marshmallow Fluff instead.
- Food gel: Use your favorite colors for the cake batter and green food gel to make the frosting green to look like grass.
- Sprinkles: To make these festive cupcakes extra colorful and fun. You could also use jelly beans, Cadbury mini eggs, or and of your favorite Easter candy.
- Peeps Marshmallow Bunnies: The star of these Easter Peeps Cupcakes! Of course, you can also use marshmallow chicks instead if you prefer.
how to make peeps cupcakes
Preheat oven and prepare cupcake batter: Preheat the oven to 350 degrees F and place paper liners in a cupcake pan or muffin pan. Prepare cake mix according to box directions by hand or an electric mixer.
Color the cake batter: Divide batter into 3 equal portions. Add a few drops of food coloring gel to each bowl. Stir well until combined and desired color is reached.
Spoon cake batter into the muffin cups: Use a spoon to drop spoonfuls of each cake batter color onto each muffin liner. Drop one color at a time, leaving a little space between the colors, then repeat with remaining batters until each cupcake liner is covered. Make another layer until you’ve used all the cake batter. The batter will almost reach the top of the liner.
Bake cupcakes: Bake according to box instructions or until a tooth pick inserted into the center comes out clean. Let cupcakes cool completely.
Dye frosting green: While the cupcakes cool, in a small bowl, add the frosting and a few drops of green food gel. Mix until combined and desired shade of green is reached. Add frosting to a piping bag or pastry bag with a large star tip and place in the refrigerator until cupcakes have cooled.
Decorate and frost cupcakes: Swirl on frosting and add a Peeps Marshmallow Bunny to the center of each cupcake and decorate with sprinkles. Serve and enjoy!
recipe tips & variations
- Most cupcake recipes yield 24, but I like to fill the cupcake liners almost to the top with cake batter to ensure the cupcakes can rise and get extra puffy on top. When I do this method, it usually yields about 12 cupcakes so they are nice and full!
- Change up the cupcake liners: You can use any color of cupcake liners. You can find any Easter themed cupcake liners just about any grocery store, Target and Amazon around Easter time.
- Cupcake flavor: It’s always easier to use box cake mix but homemade cupcakes from scratch are always delicious-like my Vanilla Cupcake recipe . Chocolate cupcakes, strawberry cupcakes, yellow cupcakes, and Funfetti cupcakes. Just note, if you use a colored cake batter, you will not be able to add the food gel t make the Easter colors.
- Brownie cupcakes: Use brownie mix instead of cake mix to make brownie cupcakes. Brownie lovers will love this!
- Gluten-free cupcakes: Use a gluten-free cupcake mix to bake the cupcakes since the frosting and Peeps are gluten-free. Always be sure to check the labels.
- Add green coconut: Add green food coloring to shredded coconut to make green grass for the bunnies to sit in.
make ahead
If you want to make these fun treats ahead of time you can. Bake according to the recipe and let cool completely. Place them in an airtight container or large heavy-duty ziplock bag. Freeze for up to 3 months. You could also refrigerate for up to 5 days. Frost and decorate the top of the cupcakes when ready to serve.
leftovers & storage
To-store: Place leftover cupcakes in an airtight container or wrap the dish or platter with plastic wrap. Store in a cool area for up to 5 days.
To-freeze: You can freeze baked cupcakes that haven’t been decorated for up to 3 months. Place cooled unfrosted cupcakes in an airtight container or heavy-duty ziplock bags. When ready to frost, you can frost them frozen or you can let them thaw.
