Chill crust: Add crumbs to a 9-inch pie pan or pie plate, place in the refrigerator for 30 minutes. OR you can bake the pie crust at 325 degrees F for 8-10 minutes or until light brown.
Make cream cheese mixture: In a large bowl, mix together the cream cheese with an electric mixer for a minute, then add the powdered sugar, vanilla, lemon juice, and Cool Whip. Mix until cream cheese filling is smooth.
Refrigerate pie: Evenly spread over the crust and place in the refrigerator to chill for at least 6 hours to overnight.
