No Bake Strawberry Cream Cheese Cake
No Bake Strawberry Cream Cheese Pie is the perfect summer dessert! Made with a crisp buttery graham cracker crust, light and fluffy cream cheese filling and topped with fresh strawberries that are lightly coated in strawberry jam. It's quick, easy and can be made ahead!

Graham cracker crust
- 1 1/2 cups graham cracker crumbs about 10 sheets
- 1 tablespoon brown sugar
- 2 tablespoons granulated white sugar
- 6 tablespoons salted butter melted and cooled
Cream Cheese Filling
- 8 ounces cream cheese softened
- 1 teaspoon vanilla extract
- 1 teaspoon fresh lemon juice
- 1/3 cup powdered sugar
- 1 8 ounce container Cool Whip
Strawberry Layer
- 4-6 cups fresh strawberries halved or quartered
- 2 tablespoons strawberry jam
Add graham crackers to a food processor and grind until coarse. Add sugars and butter and grind again until combined and a sand like consistency.
Add crumbs to a pie pan, place in the refrigerator for 30 minutes. OR you can bake the pie crust at 325 degrees F for 8-10 minutes or until light brown.
In a large bowl, mix together the cream cheese with an electric mixer for a minute, then add the powdered sugar, vanilla, lemon juice, and Cool Whip. Mix until smooth.
Evenly spread over the crust and place in the refrigerator to chill for at least 6 hours to overnight.
In the meantime or when ready to serve pie, combine strawberries and jam together to coat. Add strawberries all over the top of the pie, serve and enjoy!
