Monster Cookie Energy Bites tastes just like monster cookie dough in a bite size form and makes the best snack or dessert. They are perfect for on-the-go, whenever you need a boost of energy or craving cookie dough but don’t want the guilt.

Each little bite is filled with colorful M&M candies so kids will love these in their lunchbox dessert or as a delicious snack. This recipe is totally customizable so you can add in or swap ingredients based on what you want.

  • Oats: Old-fashioned oats or quick oats are the base of this recipe. You can make this recipe gluten-free by using gluten-free oats. Do not use instant or steel cut oats for this recipe as the consistency will not be the same.
  • Peanut butter: Creamy peanut butter is my favorite to use. If you want your energy bites to be crunchy, use crunchy peanut butter. This will bind all of the ingredients together. For an even healthier recipe, use natural peanut butter. You could also use your favorite nut butter instead such as almond butter, cashew butter and and sunflower seed butter will work great. 
  • Semi-sweet miniature chocolate chips: You can also use regular chocolate chips, milk or dark chocolate chips. I love using mini chocolate chips because you get more chocolate in each bite.
  • Honey: This natural sweetener adds the perfect amount of sweetness to the energy bites. This will also help bind all of the energy bites together.
  • Pure vanilla extract: Adds and enhances the flavors.
  • Mini M&M candies: What’s a monster cookie without them? This is optional but it adds color and more chocolate.

how to make monster cookie energy bites

Mix together all ingredients: Mix all of the ingredients together in a large mixing bowl until well combined.

Scoop into balls: Use a cookie scoop or ice cream scoop to create 1 inch sized monster balls.

Chill in refrigerator and enjoy: Place balls on a baking sheet or cookie sheet lined with parchment paper and chill in the refrigerator for at least 15 minutes or keep refrigerated until ready to serve. Enjoy!

  • Add more honey: If the oatmeal mixture seems to be a little dry after mixing together all of the ingredients, add a little extra honey. 
  • Make into bars: Instead of making these into a bite-sized snack, make these into Monster Cookie bars by pressing the oatmeal mixture into an 8 x 8-inch baking dish lined with parchment paper, refrigerate and cut into bars. 
  • Protein-packed: Add a scoop of your favorite chocolate or vanilla protein powder to the mixture. You may need to add more honey to make it stick together.

Add Favorite Mix-Ins

  • White chocolate chips or shredded coconut: Adds sweetness.
  • Cocoa powder: If you want to add a chocolatey flavor. 
  • Chopped nuts: Adds extra protein, texture and crunch! Chopped almonds, hazelnuts, peanuts, walnut or cashews work well. 
  • Add fiber: Add chia seeds, flax seeds, or flax seed flour.
  • For a vegan version: Use pure maple syrup instead of honey. 
  • For a gluten-free version: Swap the regular oats for gluten-free oats.
  • Dried fruit pieces: Raisins, dried cranberries, dried cherries are excellent choices. 
  • Peanut butter chips: Adds an extra peanut butter flavor. You could also add chopped Reese’s peanut butter cups or Reese’s pieces.
  • Pretzels or graham crackers: Adds even more crunch.
  • Mini marshmallows: Adds a soft and fluffy texture.
