Marry Me Chicken Soup, also known as Tuscan Chicken Soup is packed with the most delicious and savory flavors of garlic, sundried tomatoes, and parmesan cheese. The creamy soup is so easy to make in one pot and we use store-bought rotisserie chicken for optimal flavor (and convenience).
The pasta that’s added to the savory broth is so satisfying and makes for a perfect bowl of comfort. Serve with crusty bread, bread sticks, or garlic bread and the whole family will love this soup!

- Chicken: You’ll need one whole rotisserie chicken that yields about 2 cups of chicken.

- Garlic: Fresh minced garlic is best as opposed to using the jarred garlic.
- Heavy cream: Used to make a creamy broth. You could also use milk if you wanted it on the lighter side.
- Pasta: Fussili, the “curly” pasta is our favorite but you can use any of your favorite short pastas. Other pastas you can use are bow tie pasta, gnocchi, spinach, meat, or cheese tortellini, ditalini pasta, small shells, or orzo.
- Sun-dried tomatoes: Make sure to use the sun-dried tomatoes that are in oil for the best flavor and texture.
- Spinach: Fresh baby spinach is best, frozen spinach will not work.
- Seasonings: Garlic powder, onion powder, salt, black pepper, and Italian seasoning.
- Parmesan cheese: Used in the soup to flavor the broth and we add extra parmesan cheese on top to garnish. Use grated or shredded parmesan cheese.

Sauté onion: Heat a large pot or dutch oven to medium heat. Add olive oil or butter and onion. Sauté for a few minutes until the onion is translucent.
Add garlic and sun dried tomatoes: Sauté for a few more minutes until fragrant.
Add seasonings, broth, cream, tomato paste and chicken: Stir and let soup simmer for 10 minutes or until slightly thickened.
Add in parmesan cheese, spinach, and pasta: Cook for 15 more minutes or until pasta is cooked (or al dente).
Serve and enjoy: Garnish with more parmesan cheese, crusty bread, and fresh parsley or fresh basil.

- Add veggies: Add diced carrots, zucchini, celery, tomatoes, peas, or broccoli in step 2 for extra nutrients.

- Dairy-free soup: Make a dairy-free soup by using a plant-based milk such as unsweetened soy, cashew, or almond milk instead of regular milk.
- Thicker soup: If you want your soup on the thicker side, whisk in 2 tablespoons of cornstarch with 1/4 cup of water and add it to the broth.

Ingredients
- 2 tablespoons butter or olive oil
- 1 medium yellow onion diced
- 3 tablespoons sun dried tomatoes in oil roughly chopped and patted down
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 32 ounces chicken broth
- 1/2 cup heavy whipping cream
- 2 tablespoons tomato paste
- 2 cups shredded rotisserie chicken about 1 whole chicken
- 1/4 cup grated parmesan cheese
- 3 cups fresh spinach
- 2 cups (8 ounces) uncooked fusilli pasta
Instructions
- Heat a large pot or dutch oven to medium heat. Add olive oil or butter and onion. Sauté for a few minutes until the onion is translucent.
