marry me chicken soup

Marry Me Chicken Soup, also known as Tuscan Chicken Soup is packed with the most delicious and savory flavors of garlic, sundried tomatoes, and parmesan cheese. The creamy soup is so easy to make in one pot and we use store-bought rotisserie chicken for optimal flavor (and convenience).

The pasta that’s added to the savory broth is so satisfying and makes for a perfect bowl of comfort. Serve with crusty bread, bread sticks, or garlic bread and the whole family will love this soup!

If you’re wondering what Marry Me Chicken Soup is, it’s also known as Tuscan Chicken that’s made with chicken thighs or chicken breast cooked in a creamy sun-dried tomato and garlic sauce. The dish is supposed to be so good, if you make it for your partner, they’ll fall in love with your cooking ;).

Other soups made with rotisserie chicken is my Chicken Gnocchi Soup, Chicken Pot Pie Soup, Chicken Lemon Soup, and Chicken Tortilla Soup.

key ingredients

  • Chicken Broth: Make your own chicken broth or use store-bought. You can also use chicken stock or vegetable broth instead.
  • Chicken: You’ll need one whole rotisserie chicken that yields about 2 cups of chicken.
  • Onion: Use a white onion or yellow onion.
  • Garlic: Fresh minced garlic is best as opposed to using the jarred garlic.
  • Heavy cream: Used to make a creamy broth. You could also use milk if you wanted it on the lighter side.
  • Pasta: Fussili, the “curly” pasta is our favorite but you can use any of your favorite short pastas. Other pastas you can use are bow tie pasta, gnocchi, spinach, meat, or cheese tortellini, ditalini pasta, small shells, or orzo.
  • Sun-dried tomatoes: Make sure to use the sun-dried tomatoes that are in oil for the best flavor and texture.
  • Spinach: Fresh baby spinach is best, frozen spinach will not work.
  • Seasonings: Garlic powder, onion powder, salt, black pepper, and Italian seasoning.
  • Parmesan cheese: Used in the soup to flavor the broth and we add extra parmesan cheese on top to garnish. Use grated or shredded parmesan cheese.

recipe tips & variations

  • Add veggies: Add diced carrots, zucchini, celery, tomatoes, peas, or broccoli in step 2 for extra nutrients.
  • Add spice: Add a couple splashes of your favorite hot sauce or add a teaspoon or two of red pepper flakes.
  • Dairy-free soup: Make a dairy-free soup by using a plant-based milk such as unsweetened soy, cashew, or almond milk instead of regular milk.
  • Thicker soup: If you want your soup on the thicker side, whisk in 2 tablespoons of cornstarch with 1/4 cup of water and add it to the broth.
  • Bread: Serve the soup with French bread, canned or homemade biscuits, croutons, crusty garlic bread, garlic knots, or dinner rolls.

leftovers & storage

To store: Leftover soup is always a great idea, especially when it’s cold out. Store leftovers in an air-tight container for up to 5-6 days in the refrigerator.

To freeze: You can freeze this soup for up to 2-3 months in a freezer-safe container. When ready to enjoy, simply thaw and reheat over the stove or microwave. The best way to serve this soup is when it’s warm so be sure to heat it up.
