- 2 tablespoons butter or olive oil
- 1 medium yellow onion diced
- 3 tablespoons sun dried tomatoes in oil roughly chopped and patted down
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 32 ounces chicken broth
- 1/2 cup heavy whipping cream
- 2 tablespoons tomato paste
- 2 cups shredded rotisserie chicken about 1 whole chicken
- 1/4 cup grated parmesan cheese
- 3 cups fresh spinach
- 2 cups (8 ounces) uncooked fusilli pasta
Heat a large pot or dutch oven to medium heat. Add olive oil or butter and onion. Sauté for a few minutes until the onion is translucent.
Add garlic and sun dried tomatoes and sauté for a few more minutes until fragrant.
Add seasonings, broth, cream, tomato paste and chicken. Stir and let soup simmer for 10 minutes or until slightly thickened.
Add in parmesan cheese, spinach, and pasta. Cook for 15 more minutes or until pasta is cooked.
Garnish with parmesan cheese, crusty bread, and fresh parsley.
