Graham Cracker Toffee bars are the best holiday candies to have around. Honey graham crackers have the most delicious toffee layer, then it gets covered with melted chocolate, festive sprinkles and chopped nuts (optional). - Graham crackers: The star ingredient! You’ll need about 15 full sheets or 30 small squares to cover a full size cookie sheet.
- Chocolate Chips: I like to use a mixture of semi-sweet chocolate chips and milk chocolate chips for the perfect chocolate combination. Dark chocolate chips could also be used. You could use white chocolate but it will make the toffee extra sweet.
- Butter: The key ingredient used to make the best buttery toffee. We use 1 and a half sticks of butter.
- Toppings: I love using chopped pecans and sprinkles but you can use any of your favorites or leave the toffee plain.

Prepare baking sheet: Preheat oven to 350 degrees F and line a rimmed large baking sheet or baking pan with aluminum foil or parchment paper. Cover with graham cracker sheets in a single even layer and make sure they are touching.
Make toffee: In a medium saucepan, melt brown sugar and butter together on medium heat. Bring the toffee mixture to a boil, then simmer for 4 minutes, stirring constantly. The mixture will turn a caramel color. If you have a candy temperature it should be between 270 and 290 degrees F.
Pour mixture evenly on top of the graham crackers: Be careful, it will be very hot!
Bake: Bake for 6 minutes or until bubbly. Remove from the oven and sprinkle chocolate chips on top. Bake for 3-4 minutes and then remove from the oven. Let sit for 2 more minutes and then spread the melted chocolate with a rubber spatula, offset spatula, or knife. Sprinkle pecans and sprinkles on top of the melted chocolate.
Cool and let set: Let the Graham Cracker Toffee cool by letting it sit for 2 hours or until the chocolate hardens in a cool area. You can also refrigerate the toffee for 30 minutes to an hour if you want to speed up the process. When the chocolate is set, break graham crackers into pieces or cut into squares. Enjoy!

- You can make this treat for just about any occasion. Add sprinkles for a birthday or themed sprinkles for other holidays.
- Top the candy with sea salt for a hint of saltiness and it will also enhance the flavors.
- Be sure to not burn the toffee. It cooks very fast so it’s important to stir frequently and remove it from heat when the caramel color forms.
- Let the Graham Cracker Toffee sit until it’s completely cooled. This takes several hours and the best way ensure it’s completely set is to put it in the refrigerator.

- Peppermint twist: Add peppermint extract to the melted chocolate to add a holiday minty flavor.
- Other topping ideas: M&Ms, drizzled chocolate, crushed candy canes, sea salt, mini marshmallows, mini chocolate chips, peanut nutter pieces, toffee bits, crushed pretzels, cookies, or graham crackers.
- Nut topping: Pecans are one of my favorite holiday nuts but other great options are chopped almonds, walnuts, peanuts, hazelnuts, or cashews.
- Saltine cracker toffee: Instead of using graham crackers, saltine crackers work just as well.
- Peanut butter twist: Add a few tablespoons of peanut butter to the chocolate mixture and sprinkle peanut butter chips on top.
leftovers & storage
To store: Graham Cracker Toffee stores best in a tightly sealed airtight container in the refrigerator or in a cool place. On your kitchen counter is perfect as long as the temperature is cool or at room temperature. They will last about 2 weeks.
To-freeze: Freeze in a freezer-safe bag for up to six months. Allow the toffee to thaw in the refrigerator overnight.
