I love anything with cinnamon and apples especially during Fall season. This Apple Cinnamon Oat Bread is SO easy. Mainly because I partnered up with Kodiak Cakes and used their Cinnamon Oat flapjack and waffle mix as the base of this recipe.
This bread is hearty and has plenty of protein and fiber in it to keep you feeling satisfied. One of the reasons why I love Kodiak Cakes is because their mix’s are made with 100% whole grains and protein packed. With that said, this bread was created and I added chunks of sweet apples and topped it with a cinnamon glaze.
I made this Apple Cinnamon Oat Bread from start to finish in less than an hour! I especially love the apple chunks in this bread and the hints of cinnamon. Did you know this bread is also protein and fiber packed?

HERE ARE THE 4 SIMPLE STEPS TO MAKE THIS APPLE CINNAMON OAT BREAD:
- Combine all of the ingredients together
- Add in the apple chunks
- Stir until all ingredients are combined
- BAKE!
This extremely easy Cinnamon Glaze recipe takes a few minutes to make and it compliments this Apple Cinnamon Oat Bread perfectly. If you love pumpkin flavored everything during the Fall, add pumpkin pie spice to this instead of cinnamon.

If you aren’t able to eat this right after it’s been baked, I recommend microwaving a slice for 30 seconds just until ultra soft and warm..perfection.

Apple Cinnamon Oat Bread
Ingredients
For the Apple Cinnamon Oat Bread
- 1/4 cup salted butter; melted
- 1/2 cup Greek yogurt; vanilla flavored
- 2 whole eggs
- 1/2 cup brown sugar
- 1 tsp. vanilla extract
- 1 cup Kodiak Cakes Cinnamon Oat Power Cakes
- 1 cup chopped apples; skin removed about 2 small apples
- 2 Tbsp. maple syrup
For the Cinnamon Glaze
- 2 cups powdered sugar
- 1/4 cup whole milk
- 1/2 tsp. ground cinnamon
Instructions
- Preheat oven to 350 degrees In a large bowl, stir all bread ingredients (except the apples) together until smooth.
- Fold in the apple chunks until combined. Do not over mix.
- Pour into a greased loaf pan and bake for 40-45 minutes or until golden brown.
To Make the Cinnamon Glaze
- Whisk together the powdered sugar, milk and cinnamon until an icing is smooth. Spread or drizzle over the cooled bread to your liking. Slice and enjoy!

I make this weekly. I double the apples and add pecans. For topping I sprinkle turbinado sugar and cinnamon on top for crunch. Delicious !

So good. I make this couple times a month for family. Only change I make is for topping: I sprinkle cinnamon and turbinado sugar prior to baking, adds nice crunch.
