Why You’ll Love This Recipe
key ingredients
- Cake: We used chocolate cake that we made from boxed cake mix. Feel free to use any of your favorite flavors.
- Frosting: Used to bind the cake together and will give the cake pops a rich flavor. Canned frosting works perfectly.
- Green candy melts: You can find green candy coating at most craft stores. You could also use white chocolate or white candy melts and add green food gel coloring.
- Red heart sprinkles: This will symbolize the Grinch’s small heart. You can usually find heart sprinkles during Valentine’s Day but Amazon usually has them year round. Other alternatives to use are red M&Ms, jumbo heart sprinkles (sometimes these are easier to find), red candy hearts, any red sprinkles, and chocolate hearts.
how to make grinch cake pops
Mix together cake and frosting: In a large mixing bowl, add the cake and frosting. Mix well until the cake becomes like firm batter.
Form into balls: Form batter into 1 1/2” balls, we used a small cookie scoop. Place on a baking sheet and set aside.
Melt candy melts: Melt the green candy melts in a bowl using a microwave. Heat 30 seconds at a time until fully melted. Add a splash of coconut oil or any neutral oil if needed.
Dip stick in chocolate: Dip the cake pop stick (you could use a lollipop stick or sucker stick) into the melted chocolate about a half inch. Then stick into the cake ball. Repeat for all the cake balls. Allow the chocolate on the stick to harden.
Dip chocolate cake balls: Insert the cake pop sticks into a cake ball and dip them into melted chocolate until fully coated. Be sure to scrape the excess chocolate on the side of the bowl. Repeat until all of the cake pops are coated in chocolate. Place upright in a holder or foam base to allow the chocolate to harden.
Add heart: Add a dab of melted chocolate to the back of the candy heart and place offset from the top of the cake pop.
Recipe tips
- Add peppermint flavor: Add 1/8 teaspoon of peppermint extract to the melted chocolate.
- Mini cake pops: Use 1 tablespoon of cake batter to make smaller balls.
- Green chocolate: If you can’t find green candy melts at the store, use white chocolate or white candy melts and add green gel food coloring. Start off using a few drops and add more if you want a darker shade of green. If you want a bright green color, use the neon colored food gel.
variations
- Grinch Oreo Balls: Make my Oreo Cookie Truffles and use green food gel coloring to make them into Grinch treats. You could also insert a stick to make Grinch Oreo Pops.
- Cake: Use your favorite cake flavor! White, vanilla, Funfetti, red velvet, lemon, or strawberry cake flavors will all work.
- Brownie pops: Instead of using cake, use baked brownies for a brownie flavor. Reduce the amount of cream cheese you use because it will be richer.
- Grinch Truffles: Make these into candy truffles by adding 4 ounces of cream cheese to the cake mixture and don’t use a stick.
leftovers & storage
To-store: Store the leftovers in an airtight container at room temperature for three to four days.
To-freeze: Freeze the cake pops in a freezer-safe bag for up to six months. Allow the cake pops to thaw in the refrigerator overnight or on the counter for a few hours.

It says 1/2 cake. So if I use the whole prepared cake, will it yield 30 cake pops? Im trying to make these for my daughters class. Tia!
Hi Tawni, yes that is correct 🙂 I hope you love these cake pops as much as we did! Enjoy!
