Best Cauliflower Pizza Crust Recipe

Ingredients

  • 1 whole head cauliflower; chopped into small pieces
  • 2 whole eggs; lightly beaten
  • 3/4 cup fresh parmesan cheese; finely shredded or grated
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. garlic powder
  • salt and pepper to taste
  • cooking spray

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or foil and lightly coat with cooking spray.
  • Arrange the cauliflower pieces in a single layer on the baking sheet. Lightly spray with cooking spray and roast for 15 minutes. Remove and flip cauliflower and return to oven for 15 more minutes. Remove and allow to cool.
  • Heat oven to 425 degrees F. Place the cauliflower in a food processor and pulse until it OR you can also finely chop the cauliflower by hand.
  • Wring out any extra moisture in a tea towel or several cheese clothes layered together. Make sure to get out as much moisture as possible.
  • Place the solids into a large bowl and add eggs, cheese, Italian seasoning and garlic powder, salt, and pepper. Mix well until all ingredients are combined.
  • Line a baking sheet with parchment paper and spray with nonstick cooking spray. Add the dough to the center and form a circle shape with your hands or a spatula forming a 1/4 inch thickness- don't worry it doesn't have to be perfect! Season the top of the crust with a pinch of salt and pepper to taste (optional).
  • Bake the crust for 20-25 minutes or until the edges are golden brown and crusty. Remove from the oven and add desired toppings. Place the crust back in the oven with toppings and bake until cheese melts (about 5-8 minutes). Let cool for a few minutes and then slice and enjoy!

  • To make into Cauliflower Garlic Breadsticks: Follow the recipe instructions accordingly but instead of forming a circle shape before baking, form the dough into a rectangle. Top the crust with 1 -2 cups of shredded mozzarella cheese and bake for 10-12 minutes or until the edges are golden brown. Let cool for a few minutes, then slice and serve immediately.
  • Store any leftovers in the refrigerator for up to 4-5 days. To warm the pizza, place in a 350-degree oven for a few minutes just to warm. The pizza crust may not be as crispy as it was when it was freshly baked.
