Boursin Corn Dip

- 2 round garlic and fine herbs Boursin cheese
- 1 can sweet corn drained
- 4 sliced cooked and chopped bacon reserve some for the topping
- 1 cup shredded Pepper Jack or sharp cheddar reserve some for the topping
- 1/2 cup sour cream
- 2-4 green onions (thinly sliced) reserve some for the topping
Preheat oven to 375 degrees F. Let the Boursin cheese come to room temperature, then mix all of the ingredients in a bowl or in a baking dish. It easiest to smash the cheese balls with a fork. Mix until combined.
Place the dip in a baking dish or smooth the top with a spoon. Top with extra green onions, bacon pieces and shredded cheese. Bake for 20 minutes or until the top is a light golden brown and bubbling.
Let cool for a few minutes and then serve with corn chips or any of your favorite dippers.
