Spicy Cowboy Caviar

This colorful dip is packed with tons of fresh and healthy ingredients! It takes minutes to whip up for a fresh and tasty snack!

Ingredients

  • 1 15 oz. can of black beans; drained and rinsed
  • 1 11 oz. can of corn; drained and rinsed
  • 1 green bell pepper; diced
  • 1/2 cup cherry tomatoes; cut in quarters
  • 1/2 cup cucumbers; diced with seeds removed
  • 2 Tbsp. shallots; diced
  • 1 tsp. garlic; chopped
  • 3 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. fresh parsley; chopped
  • 1 Tbsp. Sriracha
  • Salt and pepper to taste
  • Avocado to garnish; optional
  • Chips to dip

Instructions

  • Mix all ingredients together with a spoon and start dipping!
