Pumpkin Energy Bites (No Bake)

These healthy Pumpkin Energy Bites are filled with sweet and smooth flavors of pumpkin, honey, and creamy peanut butter. Full of protein and so easy to make, these pumpkin protein balls are great for whenever you're craving fall flavors or in need of a quick but filling snack

Ingredients

  • ¼ cup honey; slightly melted
  • cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • ½ cup pumpkin puree; NOT pumpkin pie filling
  • 1 ½ teaspoon pumpkin pie spice
  • 1 ½ cups old-fashioned rolled oats
  • ½ - ½ cup white, dark or milk chocolate chips optional

Instructions

  • In a large bowl, whisk together the honey, peanut butter and vanilla extract until combined.
  • Add pumpkin puree and pumpkin pie spice, stir until mixture thickens. Fold in the oats until all of the ingredients are completely combined. Mix in chocolate chips (optional).
  • Place the energy bite mixture in the refrigerator to chill for at least 20 minutes.
  • Use a mini ice cream scoop or your hands to roll out 14 energy bites. Place in the refrigerator until ready to eat. Store in an airtight container.

Notes

Store the leftovers in an airtight container in the refrigerator for up to two weeks.
To freeze these pumpkin bites, then place them in a freezer-safe container or bag and freeze them for up to three months.
  • For a vegan version, use maple syrup instead of honey. 
  • For a chocolate-free version, leave the chocolate chips out. 
  • Add chia seeds or flax meal for extra fiber and protein. 
  • If the oat mixture is too sticky, try adding more oats. 
  • Add coconut flakes or chopped nuts for extra flavors and textures.
