Arugula Parmesan Salad

This Arugula Parmesan Salad is so light, refreshing and easy to make! It pairs perfectly with any meal and takes 5 minutes to make!

Ingredients

  • 4 cups fresh arugula
  • 1/4 cup shaved parmesan cheese
  • 2 1/2 Tbsp. fresh lemon juice
  • 2 Tbsp. olive oil
  • salt and pepper to taste

Instructions

  • In a large bowl, whisk together the olive oil and lemon juice until combined.
  • Add the arugula and toss to evenly coat in the lemon and olive oil. Top with shaved parmesan cheese and add a pinch of salt and pepper to taste.

Notes

  1. Once the salad dressing is combined with the arugula and parmesan cheese, the salad may wilt if stored in the refrigerator but it will still be delicious. If you don't want your salad to wilt, be sure to store the dressing separately and do not combine with the arugula and cheese. This will allow the salad to stay fresh for up to 2-3 days.
